Turkey Patties

So much better than store-bought burgers, these light patties are delicious served hamburger-style in split and toasted buns with relish, salad leaves and chunky fries. They can also be made using minced chicken, lamb, pork or beef. If you are making them for chicken, shape the mixture into 12 equal-sized rounds and serve in mini-rolls or in rounds stamped out from sliced bread.

Serves six

Ingredients:

675g/1 1/2lb minced (ground) turkey
1 small red onion, finely chopped
Small handful of fresh thyme leaves
30ml/2 tbsp lime-flavoured olive oil

Method:

1. Mix together the turkey, onion, thyme, 15ml/1 tbsp of the oil and seasoning. Cover and chill for up to 4 hours to let the flavours infuse (steep), then divide the mixture into six equal portions and shape into round patties.

2. Preheat a griddle pan. Brush the patties with half of the remaining lime-flavoured olive oil, then place them on the pan and cook for 10-12 minutes. Turn the patties over, brush with more oil, and cook for 10-12 minutes on the second side, or until cooked right through. Serve the patties immediately.

VARIATION

As well as using other minced (ground) meat, you could try chopped oregano or parsley in place of the thyme, and lemon-flavoured oil instead of lime.
