Cranberry, Ginger and Cinnamon Spritzer

Partially freezing fruit juice gives it a refreshingly slushy texture. The combination of cranberry and apple juice is tart and clean. Add a few fresh or frozen cranberries to decorate each glass if you like.

Cranberry Ginger and Cinnamon Spritzer

SERVES FOUR

INGREDIENTS

     600ml/1 pint/ 2 1/2cups chilled cranberry juice
     150ml / 1/4pint / 2/3cup apple juice
     4 cinnamon sticks
     400ml / 14fl oz / 1 2/3cups chilled ginger ale

METHOD

1.Pour the cranberry into a shallow freezer proof container and freeze for about 2 hours, or until a thick layer of ice crystals has formed around the edges.

2.Mash the semi-frozen juice with a fork to break up the ice, then return the mixture to the freezer for a further 2-3 hours or until it is almost solid.

3.Pour the apple juice into a small pan, add two cinnamon sticks and bring to just below billing point. Pour into a jug (pitcher) and leave to cool, then remove the cinnamon sticks and set them aside. Cool, and then chill the juice.

4.Spoon the cranberry ice into a food processor or blender. Add the cinnamon-flavoured apple juice and process briefly until slushy. Pile the mixture into cocktail glasses, top up with chilled ginger ale, decorate with cinnamon sticks and serve immediately.
