Soy-marinated Chicken

April 29, 2010 by Ainsley H

Two simple flavours, soy sauce and orange, combine to make this mouthwatering dish. Serving the chicken on a bed of asparagus turns the dish into a special treat. Wilted spinach or shredded greens work well as an everyday alternative. Boiled egg noodles or steamed white rice make a good accompaniment.

Chicken Escalopes with Lemon and Serrano ham

April 8, 2010 by Thomas K

Chicken escalopes are flattened chicken breast fillets – they cook quickly normal breast portions and absorb flavours more readily. In this light summery dish, the chicken absorbs the delicious flavours of the ham and lemon. It can be assembled in advance, so is good for entertaining.

Tofu and Pepper Kebabs

March 15, 2010 by Daniel C

A simple coating of ground, dry-roasted peanuts pressed on to cubed tofu provides plenty of additional flavour along with the peppers. Use metal or bamboo skewers for the kebabs-if you use bamboo, then soak them in cold water for 30 minutes before using to prevent them from scorching during cooking. The kebabs can also be cooked on a barbecue, if you prefer.
