Ingredients (6 servings)

1bell pepper (red)
2Vienna sausages
2tomatoes
1 tbspchives
2 stalksgreen onion
200 gpasta (e.g., farfalle, fusili, etc)
2 tbspmustard
100 mlbroth (e.g., vegetable, chicken)
20 mlwhite balsamic vinegar
salt
pepper

large saucepan, large bowl, cooking spoon, cutting board, knife, small bowl

Wine Tip

Simple lemonade
Cut lemons into 1/8ths and muddle with sugar. Add a shot of lime juice. Serve over ice with sparkling water. Prepare ahead and pour into a reusable bottle for your child to take to school!

Step 1

Kid approved pasta salad

Cut bell pepper into strips. Cut sausages into bite-sized pieces. Dice tomatoes. Roughly chop chives. Thinly slice green onions.

Step 2

In a large saucepan, cook pasta in salted boiling water, according to package instructions, for approx. 8 – 10 min. Drain and set aside.

Step 3

For the dressing, mix together mustard, broth, vinegar, chopped chives, salt, and pepper in a small bowl.

Step 4

Kid approved pasta salad

In a large bowl, mix together cooked pasta, cut peppers, chopped green onions, tomatoes, sausages, and dressing. Season once more with salt and pepper. Stir until well combined and allow to sit for approx. 20 min. before serving. Enjoy!
