Fluffy apple pancakes

|1 tsp||baking powder|
|1 tbsp||vanilla extract|

Riesling Beerenauslese, 2013
If you plan to enjoy the pancakes as a dessert, a Beerenauslese would be an excellent pairing. Wine should be sweeter than the dessert it goes with and, since maple syrup is very sweet, a Beerenauslese fits the bill. Riesling also goes perfectly with apple.
Whisk together flour, some of the sugar, a pinch of salt, and baking powder.

170 g all-purpose flour / 40 g sugar / 1 tsp baking powder / salt
Juice lime. Heat lime juice and the remaining sugar in a frying pan over medium-low heat, stirring often. Once sugar has melted, add walnuts and continue to cook until nuts are caramelized, approx. 3 – 4 min. Remove from heat.

50 g sugar / 0.5 lime / 75 g walnuts
Separate eggs and add egg whites to grease-free stand mixer. Set yolks aside. Beat egg whites on high until soft peaks form.

In a large bowl, whisk together milk and egg yolks.

180 ml milk
Sift in flour mixture and mix well, making sure there are no lumps.
Fold egg whites into the batter.
Grate apple into the batter and add vanilla extract. Stir to combine.

Heat some butter in a frying pan over medium heat. Spoon batter into frying pan and cook until golden brown (approx. 2 – 3 min. per side). Transfer to a plate to serve.

To serve, top with caramelized walnuts and dried fruit. Drizzle on maple syrup and enjoy as a delightful breakfast!
