mazra butter like bacon is one of those
things that makes almost everything
better but when you brown butter the
world absolutely

changes so we’re going to make some
brown butter and you’re going to see how
simple it is you know what it takes it
takes butter and a little bit of thyme t
or t t and then we’re going to add F
brown butter to some pasta that we’re
going to cook and we’re going to add
really like one main other ingredient
cheese it’s not Parmesan it’s not peino
Romano it’s maithra maithra either m i z
i t h a
or Mi i z i t sorry the Canadian got the
best of me Mi z i t h mizithra or myy z
i t ha first time I ever heard maithra
cheese was at the Spaghetti Factory
somewhere in the ’90s we used to have
our I worked at a company called onen
and we would have the president’s
spaghetti dinner at The Spaghetti
Factory because he loved it and he
always ordered the pasta with maithra
cheese or whatever it’s called on the
menu never heard of it since until Max
said hey what’s this maithra brown
butter thing I went oh my God the
Spaghetti Factory so what’s really great
about this is how simple it is honestly
we’re Browning butter boiling pasta then
the two go like this then the cheese
goes like this and then you eat and
you’re out and don’t eat it all cuz
could be kind of a fat kid thing let me
show you what’s important about the
pasta water to start and then we’ll
Carry On from there obviously this is
boiling water and you want to cook your
pasta in heavily salted boiling water
and they say heavily salted like it
should taste like the sea so I’m going
to put a couple big legitimate
tablespoons of koser salt in there give
it one good mix and now if you taste it
like this ow it should be salt and it is
and when it is in goes our pasta and I’m
using fetui you could use anything you
wanted but I just like to wait a second
you could use udon no and if you like
udon just wait till you see the kungpow
udon we did because it’s fantastic so
come on I don’t want to take my
attention away from this til it’s in the
water and it is I’ll come back in a
minute and stir it a bit but for now
we’re good this is going to take uh
package says 8 to 9 minutes so let’s now
slowly begin the brown buttering process
said like a good Canadian here we go for
the pound of pasta we’re going to use 8
tablespoons of butter and I’ll just
introduce them a little at a time you
can see this is sort of mediumish heat
the goal is not to brown the butter by
having it hit the pan and turn black
right away the goal is to Brown the
butter by having it take time this is
going to take 3 4 minutes as the butter
goes in we just want to be swirling in
the pan keeping it moving you’re going
to see the fat solids will separate this
whole thing goes from this to foamy to
then starting to get dark and when it
does a beautiful nuttiness and flavor
becomes the overriding taste and it’s

great okay medium heat that’s what you
want this little bubbling is okay but we
don’t want to get too more aggressive
than that really okay we’re starting to
pick up a little color but what I wanted
to show you is this pan being white
helps you see the color change better a
pan with a black bottom is not
necessarily going to make it that easy
and if you go too far it goes from being
that beautiful Nutty Brown butter flavor
to burnt and horrible so don’t do that
I’m going to do one thing right now
that’s probably against the rules of
Spaghetti Factory I’m going to put a
little garlic powder in it just a little
I can’t help myself yeah see this
foaming is great that’s that second step
it goes from melty to this and the
Browning is not too far away you see
right here see what’s going on here my
bad finger see what’s going on here
that’s the color that you want okay now
I’m going to turn the heat and lift it
cuz I don’t want it to get away from me
CU it could easily go from what’s
perfect to what’s effed up and if you
smell it
now oh it’s glorious oh my God it’s
insane the smell you can smell from
there yeah this is fine I’m taking this
off the heat CU I don’t want it to go
any further and we’re coming back in
about 3 minutes when that pasta is ready
all right here’s what we’ve got this is
beautiful nutty and ready so I’m going
to get rid of the burner put that on the
deck now bring my pasta over cuz it’s
ready perfectly El Dente and this
doesn’t need to be on the heat anymore
because the pasta is hot so let’s add
this pasta little bit of pasta water is
fine we’re going to be adding some
anyway don’t forget we have the cheese
coming little bit of pasta water on the
side the pasta water will help this as
we mix it in so now here’s our maithra
cheese so a little at a time like this
and then like this oh my God I’m back at
the Spaghetti Factory with Berry
toyonaga in 1995 he’s giving out the
company Awards smell this Max smell this
chance amazing I’m going to use between
a half a cup and 3/4 of a cup of the
cheese you can use as much as you want
but as we’re tossing we’re making sure
we’re getting off the bottom where all
the butter is and now some of this pasta
water that was a little less than half a
cup will help melt the cheese a little
nicer
boys I think we’re there oh my God
honestly the butteriness the brown
butteriness of this is kind of whack
quick the gardeners are coming so let’s
do this one last little bit there you go
ladies and gentlemen it’s spaghetti
Factor’s brown butter pasta with maithra
cheese hurry I want to eat it hot well
look at it maithra cheese I love you oh
boy it’s too big of a bite but do I care
no because it’s going to be so good
beautiful it’s so distinctive it’s
honestly when I say it’s taking me back
to the Spaghetti Factory it’s taken me
back and I want an award I can’t find it
so it’s the president’s spaghetti dinner
I created the award I’ll try and find it
we can put it in a in an episode because
I’d like you to see it before I describe
it to you
damn the butter is right there at the
front of my brain my mouth my senses and
then this crazy ass maithra cheese never
heard of it before never heard of it
since till Max mentioned it and I don’t
think Spaghetti Factory invented it but
they sell it you can go there and buy a
tub of it I’m going to eat I want to eat
more but I’m going to stop say thank you
