if there’s one dish that I think is a representation of where I’m from in India it’s what up how I’m chef prianka and here’s my favorite Indian Street Food wow my mom would be proud our filling starts with the batata W batata means potato and w means fried Fritter boil your potatoes until fork tender and prepare your aromatics ginger garlic green chili and we want to get all of that sauteed up with some of my vegan ghee and the essentials black mustard seeds Curry leaves our aromatics cashews green peas and our boiled potatoes turmeric for color and health and lime juice for acidity in our Basin flour mixture add some Selzer water spices and roll your potato into these little balls coat them in the chickp flour batter fry in a neutral oil until crisp no waste here use the remaining batter to make these little Crispies and this is not watera without Chutney we’re going to make our green chutney with some coriander Ginger lime juice green chili and salt Char up peanuts coconut Sesame red chili and garlic for our Red Chutney and now we’re ready to assemble our delicious homemade wow and it’s like we’re on the streets of Mumbai enjoy
