really all it’s a bread pudding that’s a bread pudding sure as a shrimp [ __ ] off just smell it yeah that’s disgusting why is it bubbling cuz it’s old that’s we’ll get rid of all no no no no no no no has filled the restaurant with customers for the first time in 5 years and so tonight the entire Fleming staff owners waiters and Cooks will be tested follow me please I am disappointed at some of the things that happened today how’s everything going out here good I just need to start sitting this room now okay but there’s nowhere to go but up now and I trust Andy 100% and I hope to God I’m right cuz if I’m not we’re [ __ ] out of luck my name is Julie I’ll be your server this evening gentlemen have you decided really don’t know something Danish obviously the grandfather duck I’m have the reader please working in bort Wayne Denny I’m wiers I need Cindy please just 30 minutes into service and a number of Entre have left the kitchen T Perfection that’s what you got dinner’s ready so clearly speed is not a problem at Fleming pretty awful however satisfying customers is how is everything this is so good this isn’t so good I’m not going to eat that take this thank you I appreciate it what’s wrong with that we her s so she said it was very Bland let’s put it this way we won’t be coming back I couldn’t even look at that and need it it’s thick and Bland you Bland too BL yeah it just doesn’t taste very good okay I let him know hated this okay okay what didn’t he like about this he just said he hated it he said he can’t eat it oh I’ll bring you the menu ma’am so you can choose something else and I’ll get you another picoli salmon thank you thank you Andy oh no come on this is mushy Andy is absolutely afraid of change he’s tried to keep the tradition and I think it’s time to move on son of a [ __ ] come on I need some extra salsa the fish is to dry what a disaster come on no way no way oh jeez it’s a Non-Stop parade of food being returned to the kitchen you know that yes almost everything coming back was Bland doesn’t taste well doesn’t taste good what’s going on with it said it was very Bland no flavor three items [ __ ] those dishes were all Danish style items that have been there for 25 years can I get you something else to eat you’re just eating bread that’s not going to help chicken was totally Bland I don’t see how anything can get get worse at this point everything’s frozen frozen and defrosted place is a mess Pinto certified exec what’s going on here what’s all this stuff floating in water that’s a group taken out from the freezer we keep it fresh frozen fresh frozen yes there’s no such thing it’s either fresh or it’s frozen I what’s this in water it’s a salmon shf Frozen it was a fresh frozen you keep it Frozen Frozen fresh frozen it stays more fresh it’s mad it is you’re making all this fresh stuff freezing it and then taking it out two portions at a time per day because it doesn’t sell enough and what if you had pled business like this nothing to do with business that’s lazy everything’s frozen trout stuffing so we take it out we slow thow it we yeah cold cold cold yeah slow th we stuff the trout then we refreeze the trout [Music] yes arrest my case certified jerk Chef the grouper was a strong smell that’s it that’s it a chef’s uh [Music] opinion it’s dinner time and Gordon is about to see how this fine dining restaurant is anything but fine hello good evening welcome to Cafe 36 welcome this evening would you care to see our wine list I’ll start here with you your how are they they’re terrific would you be able to do the salmon car sure I can do that we fire a Cobia and a salmon too I’m very nervous very nervous and very scared and we’re just hoping for the [Music] best esgo there go what is that this is the butter that we use for the escargo it’s parsley chai garlic the Butter’s Frozen as well what don’t you freeze here’s Chef Ramsey one of the best chefs in the world telling Pinta that you’re doing [ __ ] wrong in fact you’re doing it bad it was great to see Pinto eat a little humble pie what stuff don’t you freeze give me one ingredient like Atari th in the calamari I’m we never freeze it so the only stuff you don’t freeze is the stuff that comes in Frozen astounded by what he’s just witnessed in the kitchen Gordon seeks out the owners Teran car I’m panicking Pinto it’s crap I um I don’t get what he’s trying to do there Jimmy in terms of all this fresh frozen stuff everything in fresh cut up portioned Frozen it’s 45 minutes into dinner service and most customers are still waiting for their food I feel like I’m drinking more than a meat you know that’s probably the reason I don’t wear a watch cuz food Tak so goddamn long here the nightmare of Cafe 36 is still food time not being able to get your food out of the kitchen really makes your job as a server difficult cuz that’s pretty much the description of your job to serve I think they got to catch the shrimp first is this slow everything seems so slow yes if you have one more person it goes faster yeah if you had one more personal go faster yes sure Eduardo no wonder you’ve gone so old you’ve aged waiting for the last main course huh and order in tell me where to fire those Snappers Andy not yet because the duck’s going to be a few minutes what table’s next trying to do this one here I need to fire that snap or no hang on I don’t want you fire want me being ready 30 minutes into service and the kitchen is already behind Hendrick is waiting on the sideline for Andy to tell him what to do and Andy is still cooking one dish at a time Andy what’s going on with six I’m still missing the M on the last table that came on order that ticket is like a hot potato in your hand get it out waiting on not it’s not making sense ell it’s not making sense he’ll get it I know he will I still think Andy needs to get up to par he can’t do everything himself Andy needs more support back there I need all the Entre now Alan don’t make matters worse it’s bad enough having him on my ass I’m just saying six has been there forever this is a joke that’s 1 hour 10 minutes now not one on Trace served he has a restaurant next door to him and about to prove a very important [Music] Point how are you good evening busy night here tonight yeah yeah would you mind if I order to go no not at all I will go for the S tuna okay how long about 10 minutes thank you very [Music] much still know TR can you believe that well that’s 10 minutes this restaurant on average 75 to 80 minutes for an on tray let’s [Music] go ready yes it is excellent does food always come out that quick yes thank you incredible W that is absolutely delicious there’s somebody else that really needs to know about this now still know [Music] tra 30 seconds oh God something I need to show you very very quickly out of the frustration in terms of why food’s taking so long I decided to do a little experiment I ran in there ordered an entree tuna it came out 10 minutes they are full I’m just trying to show you what’s happening on your doorstep we’re going to have to have a serious talk by the way it was delicious an hour ago hungry let me know when I need to send those Snappers you ready could you give me a second just so I can get these out yeah send the Snapper so you can focus and get quicker out of the box go go go after Chef Ramsey’s constant proding Hendrick begins to cook I’m fire One Snap go for it tonight you reclaim your position as a sue Chef do a good job he’ll trust you more Snapper he Snappers to the window and now that hendrik is focused on cooking his specials at least some Entre are leaving the kitchen Snapper for you oh there go look at that thank you yeah that Snapper is really good Chef ramsy’s Snapper cooked by hendrik is getting positive reviews you cook my fish like this I’m staying home but the original menu is getting panned under nailed the snpp snap came up always undercooked man give me the plate was pink he never Cooks the way they want [ __ ] sake I’m really sorry I cannot believe that you’re happy to serve that if they want it more cook why can’t you just cook it I don’t need to tell you big boy this is your restaurant I’m so sorry you got fresh salads dressed to order and in a bowl well done excellent but Dr Morris make sure it is warm is still the woman in charge can we give a better piece of chicken I don’t like a micromanaging whenever and wherever possible is that warm this tastes like this is not Jamaican there’s no taste can I have another piece of chicken I don’t like they don’t like this okay they didn’t like this that two old people right here they’re not Jamaican they’re not going to like it Dr Morris doesn’t really like to hear a lot of complaints about the food she does what she knows and wants to do what is that there chicken breast Daniel yes when was that cooked that was cooked yesterday Jesus Christ doctor yes I can’t believe we’re doing this that was cooked last night it looks like a gira’s tongue okay makes me feel validated I guess that the points that I’ve been making for months are the points that he’s making now do you have a dog at home better in a bag inside the steamer Madam I’m really sorry but you’ve lost the plot I don’t like when you disrespect me so if you can tell me where you think I’ve disrespected you you told me that I was crazy upstairs I’ll tell you why the practices and how you’re running a restaurant is packed with stupidity I didn’t say that you are demented didn’t say anything like that at all you no you specifically say like this that’s what you say to me right you let me finish if I say that to you how would you feel I’m not a delicate dangy flow going to take everything you say personally but let me tell you something the practices are ludicrous can I just show you something ready no answer just just feel that it’s frozen it can be well okay okay it should it should not be frozen well it is
