The venue is Ruby Tates in Brighton, owned and run by ex-actor and failed Hollywood wannabe Allan Love. It’s an oyster bar and seafood restaurant but Allan’s never tasted the food because he hates fish. Can Gordon persuade Allan to shape up?

bust just what I put my whole life into and everything I have ever earned my whole life is in this place honestly if I was out I’d come here and [ __ ] fire all of us Allan’s lazy crazy chefs are taking advantage of him C in the egg [ __ ] a [ __ ] day the restaurant is sinking but Alan’s too soft to save it now we’re in choppy Waters Alan’s in denial about the whole mess there’s no reasoning with you is there at times like this I think you deserve to sink he ain’t God he’s Gordon Ramsey a successful businessman screw him [Music] I’ve arrived early to surprise a fancy Oyster Bar in Brighton’s Bohemian cemp Town District my challenge is called Ruby Tates it’s in a camp alternative area where most people read the guardian they like eating out but they do so with a conscience but they’re taking it a bit too far with their pretty boy e taxes rumor has it that I am a bit of a gay icon yeah featured in the top 10 last year and uh yeah bit of a worry every year we’re going up this is the perfect area to set up a restaurant it’s got a really nice social Buzz about it they’re not short of money round here this is almost like sort of Soho on the sea oh dear oh dear can’t exactly jump the lights of this [ __ ] wi can you former star of stage and Screen Anan love opened upmarket seafood restaurant Ruby takes a year ago he thought he’d spotted a gap in the market for fancy dining it’s a different atmosphere totally different atmosphere than an all restaurant people don’t just come to eat they come for the dining experience Allan serves up expensive Seafood to cemp town trouble is no one wants it and he’s losing a grand and a half a week I think fish is a way forward the oysters and fish it’s something that’s going to be bigger in in the in the very near future not the distant future undeterred by his huge losses Alan thinks he’s got it right and spends his time dreaming of his great starring roles L of West End shows cats Gods spell this is my stage now you know this is where this is where I get up and perform one door open you know I call it the Alan love show but it’s kind of isn’t the Allan love show it’s it’s it’s just me if people are laughing I don’t care what they laugh with me or at me long as they laugh while Alan dreams of his past he ignores the kitchen leaving It All To His Two Chefs first there’s laid-back Aussie traveler Jamie but there’s no sort of passion there there’s no [ __ ] motivation to [ __ ] come to work you know I’ll be honest with you I’m just doing it for the [ __ ] for the mola man but there’s also volatile fiery Frenchman Alex who can’t control his temper thank you you go out you go out please please you go out you are please you go out thank you very much you don’t come back in kitchen I don’t care what people of me you know the only people I care is like my [ __ ] parents and my girlfriends right everything’s great apart from fcking but everything isn’t great Allan’s about to go bust and he’s in denial about it the genius of the people in the world that are geniuses they surround themselves with genius that’s their genius andreid Weber is one example I’m the nice guy he’s a and what I try and do in the kitchen is have the best I can afford to have honestly if I was Al I’d come here and [ __ ] fire all of us but he doesn’t man he’s paying us to [ __ ] he knows we sit on our ass they’re not expecting me at Ruby Tes till this evening right I really want to catch this restaurant napping I’m going to jump in there now and join a table for lunch and see what they serve normal customers without them knowing that I’m coming for the first time I’ve secretly asked a couple of Foodies to go undercover and order for me I don’t want the chefs making a special effort on my behalf I want to eat what gets served every day it’s not five star it’s not even three star but at the end it’s not [ __ ] 25 quit how are you good to see called the early train the early train how are you welc to man yeah you [ __ ] got us my dining companions have ordered a plateau of Freedom a usually serve cold that’s the strangest plate Freedom I’ve ever seen in my entire life where’s the ice it’s actually hot man uh it’s warm yeah come on that’s the first you think for 55 quid they take the [ __ ] sack out the lobster wouldn’t you nothing worse than a gritty Lobster never do how was your um how was your oyster interesting I don’t bu see those though this expensive Seafood just goes stale as no one’s buying it smells it looks like someone’s put a dog stick in the [ __ ] oy PO is Jesus Christ wh to him holy [ __ ] is that normal like that yes me that’s just like a little rubber elastic band it’s like eating the inside of a golf ball and was what he say he doesn’t like says that’s like a golf ball and that I think he said it was bitter bitter yeah look can you put that in bin please serving old poorly cooked seafood is dangerous whoever’s the head chef shouldn’t allow it are serious man can get that [ __ ] camera out of my face dude seriously just for 30 seconds here you can tell now everything is [ __ ] but we don’t need Garden for tell us that we know that from the start it’s [ __ ] lemon and C Berry sauce but you’re the menu is far too expensive for the area and as for the artwork would you like the dessert or somebody sick on the walls no the artwork is by a local artist there’s a pair of knickers on the wall there on that but is that legit that is a pair of encrusted knickers it is it’s um and it’s part of the artwork as well yeah why not next up seab bass served on a bed of shizo that’s definitely farmed Farm seab Bass from Greece and 100 m from the beach almost like the chef’s given up bored and fallowing Out of Love with fish really if it’s not available locally caught then take it off the menu yeah satisfy meal disgusting total cost 175 quid sir good to see you good to see you how’s your meal yeah interesting and different is he is he P it’s obvious while people aren’t coming bad food at ripoff prices with turn of been so dire mhm how long can it continue to stay open can you get through the summer no I mean I just borrowed another 30 grand but that’s the end of it I’ve got no more so if that goes it’s [Music] over don’t get upset hey it’s good to meet you don’t get upset hey get some fresh air I can see it in your face I can see how [ __ ] painful it is well it’s just you get it’s the end the end of the boat and and when there’s no more I didn’t realize things were that fragile I’m sorry yes no it’s not fragile it’s just you know sometimes you just something hits the nerve and and and unfortunately this hits the nerve because because you know I try not to look at it I try to think about it but it’s still trying to find the money to pay the loans you know [ __ ] and I’m very proud of what I’ve done and it’s probably not right maybe I’m full of crap but it’s but it’s just what I put my whole life into and everything I have ever earned my whole life is in this place destroy Allen’s right on the edge I’m going to confront the head chef who’s responsible for this mess gentlemen Mr R would like to say hello this is Jamie Jamie you how buddy you are you from where Australia Australia to see Isaac Isaac how are buddy and Alex nice to meet you Alex from France from France wait and chef chef not head chef just a chef chef chef so you must be the head chef no no I’m same as jamy we walk together the team always together you have no Chef in his kitchen right so who takes charge I’m just trying to figure out the uh the kitchen what the menu or the kitchen both [ __ ] me no one really look honestly man look we just get the sort of get the job done we’re in the ship my friend and your attitude stinks why are you here then just to get a bit of was [ __ ] hideous how the [ __ ] can I sit in the restaurant Beach 100 meters in front of me and eat a farm sea bass from Greece that should be in a [ __ ] Chinese restaurant in the middle of Soho yeah cuz it’s hard to get fish in Brighton what yeah I know he’s wrong I know he’s wrong like close to the Sea it’s supposed to have like 20 fisherman on the [ __ ] sea front there’s no fresh fish in [ __ ] Brighton where what shop where we can buy them what shop like fish supplier what about the fish market Alex you’re 32 years of age yeah yeah you speak [ __ ] good English yeah yeah and your attitude stinks why is she stinks then H you turn don’t judge me like that you know because he start to pisses me off now have you given up yeah I told you yeah I given up for that because I’m not interested enough by what I do every day so why don’t you [ __ ] off back to France just about all the customers go out and say it’s great what can I tell you you know in their defense you know not my defense but I can’t believe my ears Allan denies there’s anything wrong with the food this guy’s lost touch with reality how long can you both continue taking the piss out of him that guy bursts into tears in the bar I don’t know if you realize how fragile he is right now yeah he looks like a guy’s about to [ __ ] off on bright and pier and jump off the end sentimental old actor Adan Love’s post seed food restaurant is about to fold and he’s harboring a dark secret one would think that if you open a seafood restaurant you’d actually like to eat seafood I have a bit of an aversion of fish here just because I had a bone in my throat appeared and three days and I couldn’t and I had a real problem with it and and if I get a bone I get physically sick how old are you when you got the bone stuck in your throat probably about five five how old are you now 60 60 it’s been a while it’s absurd how can Alan judge his menu if he doesn’t even eat it but what else is wrong I want to know what the locals think you know call Trendy de if I said to you the word Ruby Tes what does it mean Ruby Tes sort of Curry thing I suppose Ruby Tes what does it mean something to do with potatoes why have you been in the decor pretend just with no substance perhaps what do you think the decor bit I soit but yeah it just looks a bit wanky what do you look for in a seafood restaurant here um fish and [Music] chips Allan’s Pony Restaurant offers very expensive badly cooked seafood stupid Decor meanless name and what the people of Brighton want is good locally caught fish cooked simply Farm sea bass and a hot platter of Freedom Air will not get the punters back into Ruby takes that’s for sure the slacker chefs are paid well to cook dross I need to investigate what they’re doing wrong expensive Lobster will only attract Niche customers and they won’t come back if it’s badly cooked uh madam what did you have I had post po which is TE is it tough yes it’s tough yeah laborless you I’m going to get to the bottom of why this Lobster tastes so tough Jesus how come they’re all cooked uh you don’t cook these to order uh no they cook them before they just blunch in water for like 4 minutes that’s it really they look like they’ve been cooked for a lot longer than 4 minutes there’s so much money here but why are they all cooked and separated from their bodies because for when they use them they can pick up straight away like is that Jesus look another [ __ ] set there’s £200 worth of lobster here pre-cooking is wasteful and ruins the taste it’s barmy when when did these arrive this one but they’re all open they this morning I know we not serving them are you but they’re dead they’re all open some n inside what Alex come on [ __ ] me I’m not blind I know I know you’re not blind G they’re open every one of them is open so we’re using them tonight if we need some yeah we you’ll kill somebody they’re all open they’re dead you can’t serve them Alex yeah I know you’re not that [ __ ] stup out of denial the quicker we can work together yeah that’s the problem with the kitchen man how much [ __ ] Lobster is there now I feel for you not just your [ __ ] your wallet but where the [ __ ] you’re going to be in 3 months time if [ __ ] [ __ ] like that’s cooked every day well but I cannot work with someone that’s in complete denial if that be the case and go I don’t know what to say mate because I’m not in denial I’m just saying talk to me about the problems show me the problems I didn’t know today that the problems existed and I should have known I know I’m wrong I should have known but I didn’t know because I put trust into the Departments that I felt needed trusted part can we work together sure we can work together thank you thank you oh the kitchen sucks you know all the staff are crap you know what what the [ __ ] am I doing here might we shut the door and open a [ __ ] bicycle show [Music] last night told me everything expensive food wasted leaderless chefs and a restaurant owner acting like everything’s fine merrily ignoring the Meltdown I’ve heard Allan’s put his house on the [Music] market hi every bu how you well how are you yeah well thank you how are you I I knew things were quite [ __ ] bad but I didn’t realize why’ you have to sell it just to keep everything going and where going to live um yeah do you have to sell it yeah course is it the pressure from the bank to sell it or is it just cash flow for the restaurant uh it’s just cash flow for the restaurant I’ve just bought as much as I can to get some mortgage mortgage is 430 Grand and you know the last six months I borrowed 40,000 and put into the restaurant [ __ ] H there’s a lot of riding on this huh work it out together you know that there’s just some real tough decisions that need to be [ __ ] made instantly you know that yeah and I can see it’s your [ __ ] life and soul I can see how much it means to you I I I totally get it I read it if we can’t save the business Allan will lose his home see his daily takes 17 mhm it’s bit so D strong I mean I got one day we took 325 that was a beer [ __ ] hell we’re in the middle of the [ __ ] season we need to find a way of doubling the turnover I’m not thinking [ __ ] lobster thermador I’m thinking looking at these figures [ __ ] fish and chips I’ve got a trick up my sleeve to get chemp Town’s Bohemians eating on mass at Ruby Tates sustainable fish Pollock lemon so gernard and done in a different way where the customer gets a choice is it fried is it grilled is it poached you feet gentlemen watch out freshly caught fish just might Inspire these chefs Farm SE bass is out I need something cheap and sustainable for tonight’s fish and chips rumor has that you can’t buy fresh fish in Brighton what the [ __ ] is this I agree I woes is pile them high and sell them cheap portion after portion of fish and chips [ __ ] house for sale this morning that upset me don’t ask me how [ __ ] upset this man got it was [ __ ] disgusting it’s not your fault but you’re part of it okay I’m not blaming you individually but you’re working for this man and if you’re going to [ __ ] take the money then do the work for it okay Jamie same for tonight only high volume sales and reasonable prices can save Alan I’ve invited some Camp Town locals to tuck in do you want to go have a look outside check out the I just did yeah yeah and and it looks like it’s going to be fun busy yeah busy yeah good two more fish of the day that’s 11 fish of the day total I love this man get out of your [ __ ] comfort zone here right really [ __ ] good we’re full but these chefs aren’t used to hard work can they cook consistently which I have to say I’ve never heard of poock but um so far so good very nice actually the wait just recommended it to me so when was the last time you had a nice piece of pollock I’ve never had never tonight it’s done in a crispy batter homemade chips is it good or just come through the batter is very thin and crisp and it’s absolutely lovely and the fish itself it’s such a fine texture it that’s nearly 20 portions in the last 15 minutes you know that no [ __ ] around thank you sir six more now yes yeah the resturant is full up yep for me the most important thing about tonight’s [ __ ] food is it’s local produce from down there there’s no [ __ ] Farm sea bass from Greece yeah there’s no lobsters from [ __ ] in you know Canada this is local produce caught straight off the boat into the batter and served how’s your Pollock oh delicious very good very good first time I’ve had Pollock and I enjoy it I shall have it again how are yours dear can’t believe you said that to me about my bollocks I thought you were great in the Queen by the way I beg you that’s how you speak to your people no you feel like reborn I don’t know like you feel you do something you just proud of yourself that’s it just to do something different you know I care this Tuesday’s Takin are phenomenal Allan’s made two grand when he’d normally take 200 quid so if we can do two grand on a [ __ ] Tuesday with 80% of our clients are having fishing chips and GL of [ __ ] wine I’m Sorry by the time we get to [ __ ] Saturday we should be sort of you know 8 n 10 grand but from where we’ve gone from where we are is yeah we’ve won nothing and tomorrow morning your house is still up for sale yeah Allan’s at last proved he’s got some guts but will he risk revamping the Psychedelic Decor of Ruby Tates which the locals hate I hope they hadn’t been warn that’s all I can say been sick I’m running out of time the menu is changing and so must the decor it’s time for the knickers to come off I can’t let him just destroy it I can’t do that and I won’t do that you know I’ve got you know I’ve got to stand up be a man he start he SS around method in your Madness the colors came from the original painting that I got which I liked over there so you bought the painting and then designed the restaurant on the back of it yeah it’s like something that Jimmy s would keep his [ __ ] jewelry in well if that’s what you think that’s okay I don’t I disagree with you do you want fish on the wall you know mean you I’d rather have a [ __ ] here for 3 years just so happy to be back in Paris the French are a nation of meat lovers each eating an average of 90 kilos of the stuff every year a vegetarian restaurant in Paris my God in the heart of the marry one of paris’s Premier neighborhoods for gastronomic delights Pico a tiny vegetarian restaurant run by Scott Rachel MCN is struggling to survive it’s nice to Be Your Own Boss if you like but it’s also very stressful you know I think if the restaurant was doing well and it didn’t have all the debts that it had then I would probably be sleeping a lot better millions of hungry parisians and tourists flock past every day but only a few are choosing to eat at Piccolo and those that do wish they hadn’t F and put on since Rachel took over the business she’s been losing nearly 5 and a half grand every month the debts are spiraling out of control and if things don’t pick up she’ll be closed in 3 months Piccolo theatro not me this is a first I spent three years working my butt off in a prian kitchen and I know just how tough it can be hello hello how are you I’m well thank you nice to meet you likewise good to see you too now how does a beautiful Scott find herself in the middle of Paris running a vegetarian restaurant how up in Paris a French man originally okay um well I’m vegetarian for since I can remember so I was attracted to this restaurant um I’m dying to get in the quicker I can get in the quicker I can get out indeed the size of it it’s minut Rachel runs the place with the help of her best friend Stephanie her only waitress you’ve been friends since four yeah amazing there are just Two Chefs K Chef Fiona only works three mornings a week Daniel is the head chef and Resident philosopher Where is the is this one from glasgo as well dude no where is he from bra he’s Brazilian okay what dish would you like to recommend for lunch and Las yeah it’s absolutely delicious it’s not on the menu at the moment this is is normal oh yes yes welcome to the mad house so we got a pistachio nut a walnut and now a Brazilian nut classic and there was a couple hereo um the other day who had just got engaged that day and they ordered the humus and they said it was the best they’d ever had in their lives that’s amazing so uh you might want to try it I cannot believe I’m sat here in the middle of Paris if my chefs M gav and Jan Could See Me Now they would beat the crap out of me you know that to start the famous hummus salad top with raisins and dried onions get off there go I love hummus but that’s disgusting so how would you describe the food not particularly spectacularly exceptional is this girl for real next up carrot Gratton which if done properly should have a gorgeous bubbling cheese crust okay so that’s the Graton there yeah b a p it’s almost a bit of an insult to a vegetarian fine they don’t eat meat but they deserve some form of respect in terms of cooking vegetables properly Steph you got two minutes please yeah time for this bunch of jokers to face the music the joking and the fun and the singing and all that crap that’s fine when you’ve got a success the food was [ __ ] it wasn’t nearly there it was a mess most of the customers that come here do actually leave satisfied and do enjoy the food okay I’m deeply concerned because I got to get him in the right frame of mind and standing out being a vegetarian restaurant in the middle of Paris is a [ __ ] hard task okay thank you bad food and bad attitude this is going to be tough there’s a lot riding on Piccolo succeeding Rachel’s got a young son to support and her dad has invested at least 50,000 in the business she needs to Spill the Beans you haven’t paid rent since last October since October 1,600 a month should have been paid and the tax mans owe €10,000 there is a bank loan which hasn’t been paid uh for about six months it’s going to take a lot of hard work to pull Piccolo back from the brink and and and seriously how bad do you want to save the business badly yeah absolutely yeah of course I do it’s I don’t have anything else here you know it’s my it’s my life it’s my livelihood Piccolo clearly needs a massive shakeup but before I make any changes I need to see how Daniel runs the kitchen it’s Saturday night but at 7:00 p.m. with the first table already seated Rachel seems agitated he’s not ready and there’s hardly anything on the menu so not ready like to do some cooking yourself what’s he been doing for the last 3 hours that’s what I’m he’s he’s just he’s pretty CH that’s just the way he is Daniel’s first order is for two Garden salads [Music] [Music] almost 20 minutes later he’s still fiddling with the salads is this how it normally function I would say don’t my it’s my fault this is a joke I’ve never seen anything like this I’ve not see anything like this this Brazilian nut has lost these marbles it’s burn burning it’s [Music] burn right there’s a pan here burning I’m trying to change the pan for him and he’s just telling leave it there there are now eight people in the restaurant and barely anyone is getting served I mean I’ve seen some bad kitchens in my time but not quite as disorganized and [ __ ] chaotic as this Daniel is clearly hard to handle but Rachel is the boss you all right uh no I’m not all right I’m really [ __ ] pissed off in three [ __ ] hours he could have made a [ __ ] dish or two and he’s [ __ ] doing it on purpose he should be [ __ ] ashamed I’m ashamed I [ __ ] ashamed to go and see any fuckingom killing your business this is so sad do you know that but he needs to get his [ __ an needle in a Hy stack are you vegetarians no no why not because I like meat are you a vegetarian uh yes I eat some fish but I’m vegetarian the only way Piccolo Will Survive is by serving veggie food that even meat eaters will love all good food comes out of a small kitchen yes it’s time to get started on Piccolo’s drop dead delicious new menu until Rachel finds a new head chef and relying on part-time commy Chef Fiona kidney beans in first yeah beans in a rich spicy Tu bean chili should have the veggies and Carnival’s chomping at the bit keep it all nice and fresh yeah yeah summer time salt in your cookie no not not never okay but I’m vegetarian French vegetarian French you can still season things I know their food is Bland in general but you can still season it yes look at that leaving Rachel alone is the best thing I could have done go there’s not much in the fridges some there some salad she’s found a temporary waitress and has decided to go into the kitchen herself uh okay so I’m actually going to be the kitchen because the normally my friend was supposed to be in the kitchen and she’s she’s walked out so oh that’s pretty okay so who’s the the D I found a waitress to come and uh so you so I’m going to be in here I’m giving Rachel one last chance to prove she really wants to save this restaurant yeah t is in the oven so you get the plate out and put the C on there thankfully these new dishes are foolproof the Chili’s ready to go gratt and the chili for table five and the Gratton simply need heating up watch the first of Piccolo’s new hearty dishes are already hitting the spot I love better turn and about 4 minutes now for the main course don’t forget to give them some bread on table eight dad can I pull you back all right oh cool oh is India coming to do some work oh Magic Rachel’s dad has a financial stake in Piccolo and has been looking for a new head chef swee later bye oh my dad’s coming over with somebody and she’s a chef so she’s coming over tomorrow with my dad for I don’t know if she’s coming over to for how long but she’s going to help out anyway for the time being oh that’s good news Rachel has just been thrown a Lifeline [ __ ] H what a nice um it started off as a disaster I felt at 6:30 this afternoon that I really wanted to get the [ __ ] out of it to be honest um no substance no commitment and uh two sort of tizes playing at running a restaurant so Stephanie [ __ ] off her attitude stinks and um Rachel’s finally woken up I’m glad she started to sweat because that’s what it’s like running a restaurant and uh if she really wants this to succeed then get used to working like this because it’s a business got a phenomenal possibility of a great success here but it needs a commitment and that doesn’t mean a commitment from a waitress needs a commitment from a boss somebody who’s running the place so you know you proved tonight that you can do it so [ __ ] well done okay [Music] cheers now things are starting main course a lot of washing up let’s go get some business I’ll prove that by offering a quick good value lunch Rachel could some much needed cash but I know this stubborn Scott will take some convincing so unbeknown to her I’ll be opening the restaurant for lunch myself always dreamt of having my own restaurant in Paris and finally it’s here shoa a par unfortunately it’s a [ __ ] vegetarian restaurant so uh yeah super a roll [ __ ] if the soup’s good they’ll be back for dinner they all sat down at the same time now I’m in the shed there’s roasted Vine tomato soup with cheese I’m not [ __ ] around by any means but for me did you say all that this morning on 6ur ahead I swear to God I am not [ __ ] around and I don’t know if I believe you me I’m just not quite sure I believe you actually but anyway okay I think at 6 that’s an awful lot of people that you’ve serve soup for this side the ship I swear to God they were standing up there and there was a queue and they were coming in and coming out I cooked and I served on my Jack right 200 300 that’s 430 clearly Money Talks seriously as an eye opener it worked €450 I’m absolutely [ __ ] astonished really uh it’s really exciting if we could do that every day then the whole business turn around just just from lunch time alone I’m nearing the end of my week in Paris where I’m trying to save vegetarian restaurant Piccolo tiatro and rescue a damsel in distress you just don’t have the support of all your family and different friends and you know quite often I will pH my mom or my dad and be down the phone you know it’s been disaster after disaster nice one [ __ ] but the Cavalry has just strolled into town hearing of Rachel’s crisis her Father Brian who has invested in Piccolo has flown in from Scotland bringing 23-year-old Chef India I’m sorry first name excuse me Brian Brian nice to see you welcome am I pleased to see you and this is India this is India my daughter how arey IND IND going to be right hand man I can’t wait something we need it going to go back to the hotel pick up my weights get back in I like Brian already and I need to bring him up to speed look s with the cheese on to for €6 got about 90 people in here really 6 [ __ ] incredible it shows you what you’re doing right exactly I’ll be more enthusiastic and motivated if there’s money coming in what do you think’s wrong with the business well I think a bit more has to be put into it a bit more commitment from Rachel I think I think her her her her weaknesses are running a business and just take charge good and you’re going to be here for the next three months right St thank God for Brian now all I hope is that India’s Got What It Takes I’ll be leaving my work uh my family first time abroad on my own um be very hard and but I’m sure I’ll do I’ll do good and I’ll produce good [Music] food I know Paris is an exciting place for a young Chef I was a same age as India when I came to live here and there is there 83 R rocket 20 M squared flat absolutely minute it’s amazing I us just sit there with the windows open and just have this amazing baguette yeah Cafe crem and just sit there and think about recipes ideas and then walk up and down the street go inside bong patisseries and then come up with dessert ideas run back and start writing them down Paris is an inspiring City I want to start India off on the right foot by showing of The Incredible produce she’ll be using if she stays here um this is beautiful the quicker India learns French the better uh that’s fantastic uh the color amazing look us beautiful flavor look at the color of them if India is as enthusiastic in the kitchen there may be hope for Piccolo yet [Applause] best excellent off go um so exciting stuff there amazing lovely and mission to convince everyone that vegetarian food has changed the objective today taking boring Bland vegetarian food to something sexy vibrant and a pure Indulgence while India fills the Savory tarts with a tasty herb goat cheese commy chef fion and I are making a very naughty chocolate mousse to fill the sweet ones that would give any french tart a run for its money don’t worry about the okay yeah same TR bedtime yes R you a grand job vegetarian food is no longer boring the [Music] lovely it’s time to put Piccolo on the gastronomic map of Paris to make sure no one can miss us we’ve Enlisted the help of a few of paris’s finest tarts are you a vegetarian T help yourself please I love vegetarian TS vegetarian if the enthusiasm of these punters is anything to go by it’s going to be busy for tonight’s launch delicious [Music] Piccolo’s future looks so much Ros here but it depends on whether India is ready to trade her settle life in Edinburgh for this HF job in Paris I’ve spoke to Rachel I’ll take the position as long as she that’s great news gets her finger out or ours and start working hard and on their own time as soon as you go away it better not no no keep it up you’ve got to stand strong on that yep yep and you’re 10 years younger than the owner but you’re 10 years more mature and don’t fall in love no I won’t [ __ ] them too busy exactly I want to make sure Brian’s going to keep the pressure on as I’m still worried about Rachel’s attitude they’re going to have to seriously run it as a business and make make money which they got every chance of doing I hope finally she’s um she gets a message but you need to make sure that she stays discipline on it that’s one big ask from you all I can do is try I can only do so much anyone yourself or anyone who who may she may listen to for advice business advice can only do so much it’s down to her thank you in just a few hours we’re launching Piccolo’s new sexy vegetarian menu and Indians decided to add one of our own dishes got beetroot got cheese mixed H salad and the the dressing is chive Basel and olive oil so we can do that as a starter nice would you like a taste that’s nice all the dishes on the new menu are indulgent rich and filling like this toffee Apple TARTA tan so when we cut through the apples we got this really nice dark caramel yeah and creamy PE and cette cheese tart beautiful go chees loving little blocks like that as it Cooks it just melts across there’s after all the disasters tonight’s launch needs to Mark A New Beginning for Piccolo and for Rachel you are the boss and what you say goes and they’re all going to follow suit if they see you not giving a fig and you you know over relax and overc comfortable everybody else does it and you’ve got you got such an amazing chance here I need to to behave more as a boss and if People’s if anyone that’s I’m employing is not going to listen to me then they can [ __ ] off um new menu new Chef new attitude six six I like that Rachel’s talking the talk but at opening time she’s still not ready right ready to open the doors up I need some bread first who’s going to get the bread [Music] garden where the [ __ ] am I get tart one grat and one salad Piccolo’s new menu is a million miles from the Bland Brown slop they were serving just a few days ago I think with me two TS in the oven okay okay if we both think about them we don’t forget them okay there’s also a beautiful creamy chilled melon soup and India’s beetroot salad is an instant hit I like a good beet I like that salad by the way nice and fresh yeah it’s delicious I have a feeling you all have food Envy so what table ready for and just four sevens seven the only problem is the rather service anywhere right okay Sher and me move your ass yeah thank you very much at least the food is keeping everyone happy make sure they save room for dessert The Arches were beautiful yeah the mushroom thing was just spectacular I always F vegetarian food the Bland Bing and but obviously it’s not it’s beautiful absolutely beautiful vegetarian cooking has changed rabbit food is out sexy indulgent Vegetarian Cuisine is in y nice yeah tonight proves that Piccolo has the potential to be a success but I’m still very worried about the future I’m not 100% convinced that Rachel has the right attitude to run a business and if this doesn’t work and she doesn’t make money in this place unfortunately she’s only got herself to blame because it’s all here all right listen don’t let me down okay and so far yeah you’ve done a [ __ ] good job you know that keep it up I left 6 weeks ago the place had huge potential a great new menu and a talented young Chef in the kitchen what a shame I want to know why it all went so [Music] wrong and the first person I’ve arranged to meet is India nice to see you and to see you what a shame that we’re meeting here yeah I was hoping to be back in the mai me too me too seen you in the kitchen mhm damn what happened you had to go home pick up your Stuff Etc I right back in Paris uh it was a shambles complete shambles there was a mess there was flies mice uh what when when you came back yeah it took me like 4 days to clean the restaurant but where was Rachel two she wasn’t there it was me and her father we opened up we done a lunch service you opened up without her yep just I made a beautiful menu up I done all your all your dishes and I did some more dishes on um and we done a great lunch service but then just says no that’s it had enough what a shame I’m so sad not to be here I love it so much yeah and I love the food yeah it’s a shame Rachel’s laziness has cost India her job there’s no pressure I want to make sure her career doesn’t suffer let’s look at get you some work experience in London if she’s not going to you know take full advantage of your level of excitement then [ __ ] it I will okay okay okay I just can’t believe how irresponsible and selfish Rachel’s being she’s agreed to meet me today and I want to hear what she’s got to say for herself excuse me yeah where’s uh Madam not coming oh come on surely she can face the music at least have a word I’ll asked her I’ll just asked her left with a setup we I didn’t leave it in a in in a [ __ ] condition and Rachel didn’t try it I mean you know did no no from India’s point of view India did her best she came over and but frankly she didn’t get the backup India didn’t get the backup so I felt well I probably didn’t get the backup either so I I couldn’t see it going on you Tred to help in an attempt to salvage something from the mess and recoup his investment Brian is selling the business what about the debt what happens to the debt there was two loans on the business now paid one of them off and you’re an amazing guy you’ve bailed her out 40 minutes late Rachel decides to show her face take a seat how I I’m fine very well thank you uhhuh when India came back excited and motivated to come and support support your business and she walked into a [ __ ] hole there it was a mess it was it was a disaster why the place was as it was when you left you’re lazy you put nothing into it and you deserve a kick up the [ __ ] ass okay Missy and I’m I’m amazed I I really am the point is that I have been stressed out and not enjoying the I’ve been stressed out and since I closed decided to close down I feel a big weight is lifted off my shoulders I’m sleeping for the first time in 3 years you had every possibility Rachel of making this successful that’s decision I’ve made and I’m feeling really happy about it and it’s fascinating to watch you in a very cocky way I’m not being cocky at all your father’s money and abuse it you’re very lucky right I’ve had enough oh i’ had enough of your abuse I don’t need this deration I don’t need it sorry I’m right here abuse I don’t need it thank again thanks for coming and restaurants close easily especially when the owners aren’t committed 110% to put it back on track the only saving grace for my week at Piccolo is that I discovered India I’ve offered a work experience at my London restaurant boxwood just got butterflies in myy just want to get in the kitchen and start working she’d be joining a brigade of 18 Chefs led by head chef Stuart Gillis good to meet you young tenacious talented yeah and dying to learn and you love food love right that’s a starting qualification for me love food there’s no way in Earth I’m going to let a talented young girl like India forget her dream I think she’ll be at home here and she can shine if Rachel can’t spot the talent in India then I definitely can this girl’s got a great future [ __ ] hell thank [ __ ] I can’t sing There’s No Business Like Show Business my [ __ ] ass oh dear get 40 covers coming in so get
