Suddenly craved sweet and spicy braised pork ribs. It takes a bit of time, but the flavour is unforgettable.
Perfect with soju, perfect with beer. It’s
good as a main dish and even better as a drinking snack.
A light drink with Somersby, my wife’s favourite.
Just one of those nights.

Spicy Braised Pork Ribs

Serves 2

Ingredients
•Pork ribs 2 kg
•Onion 1 large (sliced 2 mm)
•Spring onion 5 stalks
•Korean pear juice 238 ml × 2 cans
•Water 200 ml

Marinade
•Soy sauce 6 tbsp
•Oyster sauce 2 tbsp
•Honey 1.5 tbsp
•Fine Korean chilli powder 4 tbsp (coarse chilli flakes can be used)
•Garlic 1 bulb (minced)
•Thumbnail sized Ginger (minced)
•Black pepper, to taste

Finish
•Sesame oil or perilla oil 1 tbsp

Method
1. Remove the membrane from the ribs. Pat dry thoroughly with paper towels.
2. Cut the ribs into individual pieces. Prepare all vegetables.
3. Heat a pan with a small amount of oil. Sear the ribs until lightly browned.
4. Add all marinade ingredients and stir fry on medium low heat for about 5 minutes.
5. Add onion and spring onion and cook for another 5 minutes.
6. Pour in both cans of Korean pear juice and scrape up all the fond from the pan.
7. Transfer to a cast iron pot, add 200 ml water, bring to a boil, then reduce to medium low heat and simmer for 30 minutes with lid on.
8. Remove the lid and reduce the sauce for 10 minutes.
9. Finish with sesame oil or perilla oil.

Tips
•If removing the membrane is difficult, score it with a knife. This helps the meat separate from the bone more easily when eating. If you can remove it, always do so.
•Add fresh chillies if you prefer extra heat.
