  2. koshary has roots in the pakistani dish kichri. not saying it entirely is from pakistani roots, but it evolved from rice and lentils and potatoes, to the common ingredients found in koshary, rice, makrona, salsa, chickpeas and fried onion. I heard from an egyptian youtube cook himself thats why i was so surprised
