Broiled Miso Eggplant! I’ve also replaced the eggplant with zucchini and that was delicious, too. The cross hatching is pivotal, as it allows the sauce to seep in & allows the veggies to cook all the way through.

I’m on a broiled miso kick… Now I’m just thinking about the other things I can drown in miso and broil….

  6. My best friend got an Uber two hours up to LA to bring me soup, potatoes and some lemomade drink mixes to make sure I was drinking enough water after I got mine. Having someone make you homemade meals with love is so healing 🫶 I wish them a safe and speedy recovery!
