The real floating market starts at 3 and ends at around 6. After that its mostly touristy stuff, but still a very good tourist destination.

if you want to find real Hủ tiếu sa đéc in HCM city, you can go to 62 Vũ Huy Tấn, Phường 1, Bình Thạnh, Thành phố Hồ Chí Minh – they have Hủ tiếu Sa Đéc – Bánh ướt – Bánh tằm, and when you have your Hủ tiếu, you must, i requet you must ask for sugar and add some on the noodle. 😀
