In some countries..it's not profitable to operate such resturants.. the cost of labor to Pay someone to skewer meat onto sticks for hours.. is too costly.. it only works in countries with cheap labor

You're getting overcharged. They charge you a flat fee per stick. To get charged fairly, you would need to only eat the heaviest item in the store. Otherwise You need to place a bare skewer on the scale and tare it (reset to 0). Then place the skewers with food on the scale and weigh it to get charged by weight rather than a flat fee.
First of all, almost every ChuanChuan (THIS specific type of “hotpot”) restaurant in China works like this. Skewers often are priced 0.5 RMB or 1 RMB each. Second of all as a Sichuanese person (The place “hotpot” originated from) I hate hate hate English, MaoCai冒菜,ChuanChuan串串,HuoGuo火锅,Malatang麻辣烫 are DIFFERENT very similar but different and in English they are all called “hotpot”. English I hate you I hate you I hate you.
