Cheesy Spinach Bacon Dip

16 ounces Velveeta Cheese
14 ounce can Rotel Diced Tomatoes with Green Chiles
6 slices crispy bacon, chopped
10 ounce package frozen spinach, thawed & well-drained

Chop, fry, and drain the bacon.

Squeeze or wring out the spinach to remove as much liquid as possible.

Combine all ingredients in a microwave safe bowl. Cook for three minutes on high; then stir. Cook again, in two-minute increments, stirring each time until the cheese is melted and blended. Serve with tortilla chips, potato chips, or crackers.

  8. I see you Melissa πŸ‘€πŸ˜… Tom, I use a potato ricer to squeeze my frozen spinach. I bought it at Marshall's/TJMAXX/ Home Goods…one of them. Rachael Ray had a creamed spinach recipe that used a tub of Philly Chive and Onion cream cheese. Before the cream cheese. I add salt & pepper and minced garlic. I have grated onion into the spinach as well. Then just add cream cheese and let it melt; stiring often. ❀ from Texas ❀

  10. I LOVE spinach dip, love cheese, love bacon, so YES please! ❀️ I loved spinach as a kid but don't like it now, except in dips, salads and soup. My Cowboys aren't in the SB this year so I think I'll pull for the Patriots. Great seeing Melissa on camera! Ty Tom and Melissa! ❀️

  11. I was invited to a small Super Bowl party, and this is a great idea for me. I'm just going to pick up the ingredients and make this dish at their house. The only thing different I plan on doing is cooking/baking the bacon in the oven. Great idea, and I thank you. I bet on the Hawks $15.00 to help bring up the fun and excitement level.
