Celery Soup-Subscriber Soup Series #7-The final soup for this series! So soothing and comfort food
Celery Soup
1/2 bunch celery (about 5 ribs)
3-4 medium carrots
1 large onion
2 cups milk
1 teaspoon chicken base
4 ounces of your favorite cheese that melts well (we used Pepper Jack, but Cabot Seriously Sharp Cheddar was also recommended)
Seasonings of your preference, to taste
IF YOU ARE USING A VITAMIX:
Add all the ingredients and blend until they are hot and smooth. Start on low speed and slowly move to high speed.
NON-VITAMIX METHOD:
Using a medium-sized kettle, cook all the vegetables together in butter and olive oil until thoroughly cooked.
In a separate saucepan, heat the milk, chicken base, and cheese until the cheese has melted and the mixture is hot. Add all the ingredients to a blender and blend until smooth. (We used a Cuisinart Quick Prep Hand Blender.)
If you would prefer the soup to be thinner, add some extra milk. Taste to add seasonings to your preference. We added garlic powder, salt, and white pepper.
Serve hot with buttered toast for dipping.

Like celery but not in soup so what substitute with celery seed. But celery is good for those with stages of kidney failure. So I am making this!!!
Just comparing the instructions for preparing this soup via the Vitamix or without it makes a very compelling case for the Vitamix! 👍🏾

If using a Vitamix do you skip the step of sautéing the vegetables and add everything raw, or saute and then add all of the remaining ingredients?

I like celery so I’m sure I would like this soup. The final product looked great. I have one question though. Before chopping the celery, did you “de-string” the celery stalks? Sometimes, celery can be quite stringy and I don’t know if the strings would interfere with any of the recipe steps. Thanks!!

Hi Tom and Melissa. I use cream of celery soup in several casserole dishes that I bake. It would be great to cook up a large batch, jar it, and freeze for future dishes. YUM!😊

I'm not much into celery straight either, but I do like it on salads and other ways as well.
I personally might prefer this to be a thicker soup and maybe even with added small pieces of celery.
I wonder if roasting the vegetables might be good. You could roast a pan full if making for a crowd and roasting usually gives veggies a richer flavor. I might try it so I don’t have to stand and sauté.

Hi there, Melissa and Tom 😊 This soup looks like a richer, more delicious version of one of my favorites. I love celery, raw or cooked, and soup is on the menu year round here! One year, for my birthday, my coworkers in the ICU each made a different type of soup and brought in to work, with sandwiches and various snacks and desserts. A very thoughtful gesture because they knew how much I enjoy homemade soup.

I had to go look up the price of the Vitamix mixer after you said Melissa about swallowed her tongue..I about did too.. that's crazy! Food is expensive enough , lol. Give us a break on appliances to make it.. Thanks Tom and Melissa!

When I make potato salad. I need one or two ribs of celery. I have to buy the whole bunch because the stores won’t break them up any more. I hate to waste all that celery – and now I don’t have to. Thanks for the recipe 😊

I’d definitely make this all in one pot. After the veggies are cooked, just add the milk, cheese, and bullion to the pot, heat and then blend.
Celery is good for you too. It reduces inflamation in the body….and also helps lower blood pressure. 👍
