How Brooklyn’s Best Buffalo Wings are Made | Made to Order | Bon Appétit
Chef Sam Braverman of Brooklyn’s Lori Jayne shows how to make ultra-crispy buffalo wings using a dry brine, double-fry method, and a bold Buffalo 2.0 sauce with blue cheese built right in. It’s no wonder the people of Brooklyn can’t get enough of these wings.

OMG 🤤🤤🤤
I love him. And I love buffalo wings.
Those do look fantastic, but I like the contrast of dipping a nice hot wing into a cold side of blue cheese dressing.
I like this guy
OMG!! I HAVE to have these wings!!! They look incredible!!❤❤❤
Franks is required to be a buff sauce. Anything is an imposter and subpar.
My buffalo wings are the best ever i use the tip
I have to agree with the crystal hot sauce
Da NOT the best hot sauce 😂 but looks decent
On the sauce. When you say 1:4 ratio, do you mean 4 sticks of butter to 1 bottle of Crystal Hot Sauce or vice versa?
Wow,just freaking wow.
Par-cooking is "edging" but with food, for you Gen-Z's out there
Youtube loaded this so slowly I almost didn't watch it.
Perfect!
If they’re better than Bonnie’s, they’re the best in Brooklyn.
Wow! I need those wings in my life!! Well done!
This guy really gave the whole recipe for his wings that he makes at his restaurant. What a G.
okay but how does one make chicken powder? or get it? lol
Mine are better. And I'll bet on it.
Love how you deep fry in tallow. Looks amazing!
Some of the sexiest wings I ever seen in my life 😤🔥
Dr. House's brother, Chef Restaurant
Really enjoyed the way everything was explained — clear visuals, smooth flow, and practical insights that make the whole video genuinely useful. Nicely done!
Crystal is not the best hot sauce lol
Im 100% into this whole video. Definitely gonna copy it!
Please forgive me guys but I did not know one wing made two wings 😮😮
I’m taking this recipe and running with it! These look amazing
Im sure these are some of the best wings.
Using unfrozen wings and double frying etc. Im sure no place I had wings ate even try these methods. And I try to find the best wings here in Colorado
You lost me at the franks diss
That’ll be $82
Great vid and wings look excellent 🤌💯💥
Once again half no one in Brooklyn ever heard of this place, so absolutely not the best of anything in Brooklyn. Keep promoting your friends businesses via your magazine, if it pops up my feed I'm gonna call it out because I'm not even subbed to this channel yet it keeps popping up with exaggerated claims.
I feel like you would have to secretly unlock this guy in a cooking type video game. Legend.
Some people don’t know to add butter to the sauce and that saddens me. I use Franks but I do enjoy Crystal so I might do that next time. And dude, brilliant to add the cheeses and garlic so I will be trying that
So dangerous watching this at 10:30pm before bed. What an awesome recipe & explanation.
When did Jimmy Pop open a restaurant?
The best chefs I've worked with have referred to food as "guys" or "girls."
This guy and his lil' guy wings know what they're talking about, people. That baking soda tip caught my attention — he knows his stuff.
1:04 A chicken wing consist of 3 parts. Can we get rid of this partial wings please?
WAAAY too much sauce. That's horrible.
This poor SOB looks like he’s mid way through a three day bender…
This dude is fantastic. Deserves his own series.
I want my chef to look either really heavy or tired
Me: "Bro that is the most unnecessarily large knife I've ever seen"
Him: "*smirking like an evil genius*…………..have you seen my whisk?"
i thought Tom Hanks/woody was talking.
i watched and enjoyed this whilst eating wings
i've tried a similar technique but never putting them in the fridge. excellent video. next time i'm going to follow this to the letter.
