Dark Chocolate Coconut Blondies

1 cup melted butter
1 1/2 cups brown sugar
1/2 cup white sugar
2 large eggs
1 Tablespoon vanilla extract
1/4 Tablespoon coconut extract
2 cups all purpose flour
1/4 teaspoon salt
2 cups shredded coconut PLUS 1/2 cup (or more) for topping
1 3/4 cups dark chocolate chips

Preheat oven to 350°.

Cream together the butter, brown sugar, and white sugar until combined.

Add eggs, vanilla extract, and coconut extract. Combine well.

Slowly add in the flour and salt.

Toss the chocolate chips with an extra tablespoon of flour to prevent them from sinking to the bottom of the batter. Then, fold in the chocolate chips and 2 cups of the coconut with the rest of the batter. Fold gently.

Evenly spread the batter into a prepared 9“ x 13“ baking pan. Sprinkle the top of the batter with the other 1/2 cup (or more) of shredded coconut.

Bake for 30 to 32 minutes. The Blondies should be browned around the edges and the coconut on top should be nice and toasted. Cool before cutting to serve.

  2. I have the alpha gal allergy and dark chocolate is about the only chocolate I can eat. I have learned to absolutely love it. I can’t wait to make these. I’ll have to substitute the white sugar but they’ll still be great.

  7. I agree that everyone loves chocolate, but I do have one friend who can't have chocolate at all. She gets so frustrated at church fellowship dinners because every dessert is loaded with chocolate. This recipe (minus the chocolate) would be perfect for her.
