Oh man, absolutely need to stop here on my next trip to NYC. I haven't had anything this authentic since I moved from Dallas (no really–shout out to Milk and Honey). This is making my mouth water!!!
I've been watching these interviews every now and again when they pop up, and the one consistent thing I feel is longing. There will never be enough time to meet all of these people and share in all of their cultures through food, and it's a shame. People who toil away at their craft in search of perfection should be lauded regardless of where they come from or what they believe in. We're all on this space rock together.
