cut russet potatoes in half lengthwise
brush with olive oil
Sprinkle with salt and pepper
on a parchment lined tray add butter and Parmesan cheese
Place potatoes cut side down on butter and cheese.
Bake @ 425 for 30 minutes or until the center in soft and the skin is crispy
