  1. What's the difference between shaoxing wine and yellow shaoxing wine? I've never tasted either but I know it's important for traditional Chinese and Korean food. I've usually substituted it for Mirin knowing it's not as sharp and flavorful.

  2. For the sake of experimentation, I support those ideas to modernize and bring the Chinese cuisine to the next level, ever more. But the amount of work is just too much. I don't know how these guys do it. Day in and day out. I'll be too tired to even work one day in their shoes.
