Now that the weather is starting to cool off, it’s time to break out the Crock-Pot. And what more perfect way to break it back into use than with some homemade chili!! I have no idea where this recipe came from (somewhere online) but it was a super long and complicated recipe that I have shortened and made my own. Yes, I know I’m breaking many chili laws according to chili experts but this is how I make it and prefer it.
What you’ll need:
1 lb ground beef or turkey
1 lb mild Italian sausage
1 medium onion, chopped
1 green bell pepper, chopped fine
2 stalks celery, chopped fine
2 jalapenos, minced
4 (14.5 oz) cans stewed tomatoes
4 (15 oz) cans chili beans
2 (6 oz) cans tomato paste
3 beef bouillon cubes (I use 3 packets beef flavor Ramen seasoning)
1/4 chili powder
1 Tbsp prepared minced garlic (about 4 cloves)
1 Tbsp brown sugar
1 Tbsp Worcestershire sauce
1 Tbsp dried oregano
2 tsp ground gumin
1 tsp ground black pepper
1 tsp dried basil
1 tsp paprika
In a large skillet, brown meats with the onion in 1-2 Tbsp olive oil. Drain and add to a 6 quart crock pot. Add remaining ingredients. Stir to combine well. Cover and set on high until bubbling (about an hour). Turn heat down to low and cook for another 6-8 hours. Alternatively, start on low and cook 10-12 hours. Serve and enjoy!
