Although the edges of the egg are best not burnt or brown. I simply don't fry the egg at the high temperature – more medium heat. I cover the frypan with a glass lid, so that all the white is cooked, and the top of the yolk just begins to set.
Dude went a little bit overboard with the oil, and he did not use jet engine to cook. That's why it looks really shiny and wet.
You can only make Authentic Fried Rice with Wok… which is very hard for those who can't afford Gas Stove/Hobs (can only use induction one)

The moment I saw that brown fried rice, I know it must be nasi goreng. Your nasi goreng looks really good, IMHO as an Indonesian, your kecap manis is a lil bit too much, that's why the rice looks "soggy". Also, I don't think many locals eat it with lime and sambal, but hey! It's nasi goreng. Everyone can do their own version as long as they like it & finish their dishes.
the shallots, garlic, chili and galangal, i like to pound it into paste with pestle and mortar or u can use food processor
maybe its not from indonesia but indonesia version is one of the best

4:08 ive been a line cook for 3 years now and i dont wanna talk about the amount of times ive almost sliced my hand while chopping lazily like this. Definitely pay attention when doing that, and always keep dem fingers tucked.
Pro tip: never mix the sambal through the whole dish. Keep it at the side and decide for every spoon how much you want. In that way you can control the heat.
