Come cook with me while I make a super easy chicken and rice bake. Just 3 (well, maybe 4 or 5) ingredients, a little time and an oven are all that you’ll need. And yes, you can easily double or triple this recipe. Enjoy!

What you’ll need:
1 cup white rice (or Minute Rice)
1 3/4 cups chicken broth (or water)
1 (10.5 oz) can condensed cream of chicken soup
1 lb chicken thighs or breasts
salt, pepper, onion powder and garlic powder

If using regular rice, cook rice with chicken broth. Simply combine rice and broth in a small sauce pan, bring to a boil, lower heat, cover and cook for 20 minutes on lowest heat setting on your stove.

When done combine with can of soup and spice to your taste. I used 1 tsp seasoned salt, 1/2 tsp black pepper, 1/2 tsp onion powder and 1/4 tsp garlic powder. Spread into bottom of 8×11 baking dish. Top with prepared chicken and bake at 400*F for 35-40 minutes or until chicken is done. Let rest 10 minutes and then serve. Serves 2-3.

If using Minute Rice, combine rice, broth, soup and spices to taste and add to an 8×11 baking dish. Continue as above.
