Soft Edge Pie Tee
MSquare shapes are relatively rare in fine dining, so for Single Bite Week we challenged ourselves to prove they work. The clean geometry is softened by rounded corners, giving the shape more volume and allowing it to hold a proper filling while still keeping it one bite.
@JulesCookingGlobal used two different tones of pie tee batter to create a marbled look. The conical shape makes frying easy and helps the mold release smoothly. He finished it with a tartare of applewood-smoked langoustines, an apple vinaigrette, and fried leek.
