Not trying to start an argument here… I've driven through Baja multiple times and I always saw this style of wrap called a burro and found on the side of the road and in small town food stalls. Burritos were always stuffed with more stuff and usually found in more touristy areas. Just my experience/observation. All delicious.

I do my pinto beans in a pressure cooker along with pork ribs, those chillies and chicken stock. Done in 90 min. Yum

Your sauce looks amazing. In addition to the onions you have put inside, I love to cook caramelized onions on the side and add them with the others ingredients into the sandwich. Caramelized onions gives a sweet addictive taste, like BBQ, specially with this chilli peppers sauce. Its so delicious 😋
Something that is incredibly surprising is apple compote added to this recipe. Meat, beans, I add caramelized onions and apple compote. The apple goes perfectly with the meat, beans, onions and chilli peppers sauce. It's magic. You must try it to understand 😊

Ah, I love that you are teaching the traditional old school burrito. I still make my burritos small, but my kids create the overstuffed kind. And if you don't use lard in your tortilla then it really isn't a tortilla, it's a flatbread!
This is the way I remember getting them from street vendors in California in the early 70's with avocado sauce to dip them in, yummy!

Might be timely to review the whole Shortening vs Lard debacle; there's some history there that basically exonerates lard and convicts shortening.

Minor faux pas with yer bean game, Bruh. Cook those things in new water That used soaking water is just fart juice at this point. Down the drain with fart juice. Cook in freshly salted water.
Stupid question here. I always see people removing the seeds before rehydrating the peppers. I know there are those that think all the heat and spice is in the seeds and those that think the same is in the veins of the pepper. What would happen if you left the seeds in? Just a seedy food? And yes I'm being serious with my question.
I know they are cheap protein, but I just don't know how anyone would intentionally add beans to a meal unless they are trying to survive.
