This lemon pasta salad is a fresh Mediterranean-inspired dish with chickpeas, herbs, and marinated feta—perfect for a quick lunch, meal prep, or a light dinner.

Ingredients
▢8 ounces short pasta rotini, conchiglie, or other
▢1 can chickpeas 15 oz / 400 g can or 1½ cups / 230 g cooked chickpeas – rinsed and drained well
▢½ cup feta cheese crumbled
▢¼ cup fresh basil thinly sliced (chiffonade)
▢¼ cup fresh mint or parsley, chopped
▢4 tablespoons olive oil extra virgin
▢2 tablespoons lemon juice + 1 tsp zest
▢1 tablespoon Dijon mustard or yellow mustard
▢1 teaspoon dried oregano
▢½ clove garlic grated
▢1 teaspoon honey optional, but balances the lemon
▢½ teaspoon salt and cracked black pepper
