One Pot Chicken Kabsa Recipe

Ingredients
2.5 cups basmati rice (500 g)
1 whole chicken, cut into 8 pieces

Marinade

1 tbsp grated garlic (15 g)
1 tbsp grated ginger (15 g)
2 tbsp yogurt (40 g)
1 tsp salt
1 tsp cumin
1 tsp coriander
1 tsp paprika
1/2 tsp black pepper
1/2 tsp turmeric
1 tbsp lemon juice (15 ml)
1 tbsp vinegar (15 ml)

Vegetables and Rice

150 g chopped onion
1 tsp chopped garlic (10 g)
50 g chopped carrots
50 g chopped bell peppers
130 g diced tomatoes
60 g sweet peas
60 g corn
60 g green beans

Spices

1 tsp cumin
1 tsp coriander
1 tsp black pepper
1 tsp paprika
1 tsp vegetable bouillon
1 tsp salt

1 cinnamon stick
2 bay leaves

4 cups hot water (950 ml)

Fresh chopped coriander for garnish

Instructions

1. Prepare the rice
Rinse the basmati rice several times until the water runs clear. Soak the rice for about 30 minutes, then drain and set aside.

2. Marinate the chicken
In a bowl, combine the chicken with grated garlic, grated ginger, yogurt, salt, cumin, coriander, paprika, black pepper, turmeric, lemon juice, and vinegar. Mix well so all the chicken pieces are coated. Set aside.

3. Sear the chicken
Heat a little vegetable oil in a large pan or pot over medium-high heat. Sear the chicken pieces until they develop a nice golden color on both sides. Remove the chicken and set it aside.

4. Cook the vegetables
In the same pot, sauté the chopped onion until softened. Add the chopped garlic and cook until fragrant.

Add the carrots, bell peppers, and diced tomatoes. Stir and cook until the tomatoes begin to soften.

Add the peas, corn, and green beans, then mix everything together.

5. Add spices and rice
Season the vegetables with cumin, coriander, black pepper, paprika, vegetable bouillon, and salt. Stir well.

Add the drained rice, cinnamon stick, and bay leaves. Mix gently.

6. Add water and chicken
Pour in 4 cups of hot water and stir lightly so the rice spreads evenly.

Place the seared chicken pieces on top of the rice.

7. Cook the kabsa
Cover the pot and cook on medium heat until most of the water is absorbed. Then reduce the heat to low and cook for about 25 minutes until the rice is fluffy and the chicken is fully cooked.

8. Garnish and serve
Garnish with freshly chopped coriander and serve hot.

130 غ طماطم مقطعة
60 غ بازلاء
60 غ ذرة
60 غ فاصوليا خضراء

1 ملعقة صغيرة كمون
1 ملعقة صغيرة كزبرة
1 ملعقة صغيرة فلفل أسود
1 ملعقة صغيرة بابريكا
1 ملعقة صغيرة مرق خضار
1 ملعقة صغيرة ملح

1 عود قرفة
