Today I’m going behind the counter in Japan at Ornin, a ramen shop in Gotanda serving one of the most unique bowls of Japanese food you can find. If you are exploring Tokyo travel and building your Japan guide or Tokyo food guide, this is a spot you would never expect to become Japan’s hangover cure. This Japan food documentary follows Kumazaki san, the owner who fell in love with shijimi ramen at a small shop in Matsuyama. The original Japanese restaurant had been run for 22 years before closing, and he convinced the owner to train him so he could carry on the recipe. To learn authentic Japanese cuisine, he moved there for two months, studying every detail despite the owner cooking purely on intuition. Shijimi ramen is a clear soup made from small clams packed with nutrients like taurine and B vitamins. This is part of Japanese food culture and everyday Japan life. Kumazaki san carefully adjusts cooking time to balance umami without drying the clams.
