Cooking wine is also a nice use-what-you-have alternative to white wine 😌👌 First time I’ve ever seen a butter sous vide bag! Do your clients enjoy East Asian food? I have a weakness for Cantonese style scallion-ginger lobster
Thanks for sharing, Chef Min! LOL aesthetics is like so key for you 😂. Is the ice water shock you sometimes do for veggies just for the aesthetics as you could always have a slightly shorter cooking time so it ends up just right vs stopping the cooking with an ice bath?
When working we are dry, so i use a little wine vinegar to my cooking instead of wine. Just a teaspoon ish with a little broth or water to make up the volume
I left a ladle in my split pea soup on a low flame and it made my whole soup taste like metal. But I'm pretty sure that my roommate bout it in Chinatown and Lord only knows what alloy it was. It was NOT stainless steel.
