I forced myself to like this $300 Indian dinner in Tanjong Pagar, Singapore
Is $300 Indian food in Singapore normal now, or am I just bad at being bougie? This is how I got tricked into a modern Indian degustation at Revolver in Tanjong Pagar that costs as much as a flight ticket to India. I thought the name sounded like pasta and cute bistro food… turns out it was Indian fine dining and by the time I saw the menu, it was way too late to bail.
The meal starts strong with perfectly cooked scallops, except they come with coriander, which I hate with my whole soul. But at $300, I swallowed my pride and the coriander, and basically licked the scallop clean. Then there’s the paneer – nice, with a whole backstory about ingredients from India – but to my extremely unsophisticated Indian palate, it tasted like a $12 palak paneer from Little India. The real star was the Kashmiri lamb ribs: rubbed in spices, grilled till tender, not gamey at all, and honestly where Revolver really shines… except you only get two pieces because, surprise, this is still fine dining.
The rest of the courses are good but tiny, definitely more ‘small refined eater’ than ‘I had a long day and need rice’. The ambience is dark, sexy and luxe, with the best seats at the counter facing the open fire grills, so you get dinner and a show. Public service announcement: always check what restaurant you’re saying yes to, and never judge a place by its name unless you enjoy accidentally spending $300 on dinner.
