Crispy on the outside, packed with a flavourful veggie filling on the inside —
these Sooji Spring Rolls are a total game changer!

📌 INGREDIENTS:

For the Sheet:
– 1 cup Sooji (fine semolina) — ground into powder
– Salt to taste
– Water (to make a soft dough)
– Ghee & Maida for layering

For the Stuffing:
– Cabbage (shredded)
– 1–1.5 Carrots (julienned)
– 1 large Capsicum
– 1 tsp Salt
– ½ tsp Black pepper powder
– 1 tsp Soy sauce
– 2 tbsp Oil

For Sealing:
– ½ cup Maida + water (slurry/food gum)

🍽️ METHOD:
1. Grind sooji to a fine powder, make a soft dough with salt & water — rest 10–15 mins
2. Sauté all veggies with salt, pepper & soy sauce on medium-high for 4–5 mins — cool completely
3. Roll dough into thin sheets, apply ghee & dust maida, stack two sheets together
4. Roll out thin & long, cook on a low-medium tawa for 5–7 seconds each side until light spots appear
5. Separate the two sheets carefully
6. Apply maida slurry in a U-shape on the edges, place stuffing, fold & roll tightly
7. Fry on medium flame, turning carefully until light golden brown
8. Drain on a kitchen towel & serve hot! 🔥

💡 PRO TIP: Never fry on high flame — the edges will burn before the roll cooks through!
