Chimichurri Chicken Kebabs🍗 extremely addicting tender grilled chicken slathered with bright, tangy & garlicky chimichurri sauce by @forgetthetakeout

Ingredients:
– 2 lbs chicken breast, cubed
– 1/4 C olive oil
– 2T red wine vinegar
– 1 garlic clove, minced
– 1T dried oregano
Chumichurri
– 1/2 C parsley, chopped
– 1/2 C cilantro, chopped
– 1T dried oregano
– 3 garlic cloves, chopped
– 2T shallots (sub red onion), minced
– 1T red wine vinegar
– 1/2 C olive oil
– 1T lemon zest
– 1 lemon, juiced
– 1 tsp red pepper flakes
– 1 tsp salt

Directions
1. Mix together olive oil, vinegar and oregano for marinade. Cut breasts into 1-in cubes and place in marinade for at least 30 minutes. At the same time, submerge 4-6 wood skewers in water.
2. When chicken is ready, skewer them tightly. Season with salt and place on grill or heated skillet. Cook roughly 4-6 minutes each side, or until grill marks appear & internal temp reaches 165 degrees.
3. For chimichurri mix together all ingredients, brush on chicken skewers and enjoy!
(I served mine with roasted red potatoes 🥔)
