Chef Keith Corbin reopened his West Adams restaurant with a menu rooted in California seasonal cooking shaped by the American South, and threaded with West African, Asian, and Mesoamerican influences. Sitting at the chef’s counter, watching live-fire cooking and layered flavors play out right in front of me, was exactly the kind of meal I love experiencing.
