Otto’s short rib (RED) pizza

This Italian red wine is a real classic and creates the perfect counterpart to this delicious pizza. The characteristic cherry and blackberry flavors contribute to the particularly rich bouquet.
Step 1

Preheat oven to 220°C/430°F. Halve oven-dried cherry tomatoes and slice red onion paper-thin.

On a lightly floured surface, using your hands, stretch the dough carefully into an approx. 20cm round.

On a heated pizza pan or a cast-iron skillet, mark the dough on both sides until slightly colored.

Now, sprinkle the cheese evenly over the pizza crust, spread the topping of the shredded short rib and roasted cherry tomatoes.

Step 5

Sprinkle with salt and drizzle with vin cotta. Add paper-thin onion slices and top with some freshly ground pepper. Bake in a preheated oven under the broiler at 220˚C/430˚C for approx. 7 – 8 min.
