Watermelon and goat cheese salad with walnuts

An aromatic sparkling wine, whose sweetness softens the sharpness of the goat cheese. The effervescence adds to the lively crispness of the melon.
Step 1
Juice the lime. Slice mint leaves into fine strips. Cut watermelon into bite-sized pieces.

Step 2
Place the cut watermelon and mint into a large bowl and season with lime juice, olive oil, sugar, salt, and pepper.

Step 3
Gently break walnuts apart by hand and add to the water melon.

Step 4
Wash and dry arugula and add to watermelon.
