Fluffy waffles with apple-cinnamon chutney

Apple juice spritzer
Mix apple juic with sparkling water for this classic juice spritzer. It’s not only healthy, but very popular with children. The juice mixture captures the apple flavor of the chutney and harmonizes very well with the fluffy waffles.
Beat butter and approx. a third of the sugar in a standing mixer or with a hand mixer until fluffy.

100 g butter / 90 g sugar
Add eggs one after the other and mix until incorporated.
Add flour, baking powder, a pinch of salt, and milk. Continue to mix until a smooth batter forms.
125 g all-purpose flour / 1 tsp baking powder / 100 ml milk / salt
For the chutney, cut apples into fine cubes.

300 g apples
Caramelize the remaining sugar in a small saucepan. Deglaze with lemon juice and reduce until the caramel is velvety.

Add apple juice to the caramel and reduce on medium-high heat for another 5 min.

Add apple pieces, cinnamon stick and a pinch of salt and allow to reduce on medium heat for approx. 5 – 10 min. until the fruit has softened.

Meanwhile, heat the waffle iron and grease if necessary. Bake the waffles in the waffle iron until golden. Serve warm with icing sugar and apple chutney.
