Gordon is in Manquin, Virginia, to save Seafarer’s Restaurant, run by the Halterman family, Amber, Autumn and their parents. Gordon has his work cut out to fix the warring sisters and the restaurant’s substandard food. Ramsay asks Hell’s Kitchen season three winner Rock Harper to mentor the staff, especially Logan, the young head chef at Halterman’s kitchen. The restaurant is open with customers loving the food with some complaints that they are offering less seafood.

Season 3, Episode 6

Gordon travels to Richmond, Virginia to help the owners of Southern Kitchen, a traditional southern restaurant which is struggling despite being in a busy part of the city. Owner Shane and her daughters Chelsea and Kelyn have invested all of their money and now have a mountain of debt, and all came from completely different careers into hospitality, especially with Chelsea and Kelyn being disillusioned by their mother’s dream, yet they have no intention to stay in the industry. Ramsay and his team fix the restaurant’s lacklustre food and long wait-time with a new, improved menu and forces the family to make some big changes for the future of the restaurant. The restaurant is open as customers love the soul food with cornbread, cabbage and collards receiving high praise.

The people I was out with if something bad were to happen to me if I were to go under if I needed medical attention they would kick me to the curb they had left me to die you know I’d kind of seen that behavior before it’s you realized that

At the time yeah I went to my mom mom I opened up to her I was honest so that makes sense to why you’re so supportive to Mom yeah she backed me up how long you been clean um from the hard stuff I got to be honest the beginning beginning

Of this year you’re weeks away from a year yeah you still have to be careful with a soft stuff cuz that’s nine times out of 10 where it starts mhm you know I would like to get 100% sober I would like to keep my life going because at

This point those things are just weighing me down I think the weird thing for you is that you’ve got this responsibility on your shoulders yet you’ve never been taught properly what I’m going to do now is go back to some of the basics with you and then work up

Then when we got both feet on that we climb again but we’re going to transform that restaurant into a all day eery low food cost easy to store and a much faster turnover so for me this kind of menu minimizes waste you took over somebody else’s restaurant and now it’s

Time to recreate something for the Halterman family something new I’ve said to my mom plenty of times of we’re not river people we’re not Seafood people I’ve been saying to change up the change it up change up the plan this is great this is great right crab cakes okay

Beauty done fresh crab a little nice corn sucker tach next to that a beautifully marinated grilled chicken cob salad can be done with shrimp as well depending what the customer wants next to that a big staple locally it’s a corned beef hash with a poached egg and

Grilled s bread next to that an all American Burger sesame seed bun cheddar cheese beautiful pickles and it’s with caramelized onions steak and egg we have a beautiful Porter House with fried eggs served with home fries okay yes sir right T-Bone the most important thing here that fat there needs to render okay

Mop up all that seasoning get that pan nice and hot cast iron I started using cast iron in the restaurant I have my one little cast iron pan and you bought that yourself mhm why I don’t know I just want to start cooking the food the

Right way I love that the most important thing now little bit of butter in there that’s going to make the fat caramelize even better some thyme little bit of Rosemary and then some garlic quick question do you think awesome should stay or go truthfully tough

One I would say I would honestly say go I would honestly say go but um I was play you honestly cuz even even if today even if she’s like you know she sees the light and she’s like you know I’m going to change I’m going to do this better
