tonight on Hotel Hell in Northern California near Sacramento a 200y old hotel this is the actual bed that President Grant sllep in is about to become history look at the mold on that three buddies decided to buy the business it’s like Dum and dum and dumbest are you guys really the [ __ ] owners true story but they’re so busy drinking were you drunk yes drink three for me dancing they really like to give lap dances lap dances and having fun at the hotel and the guests we ask you to check in for the room unelected if I don’t do something soon the town will lose its most important historic building to a bunch of Frat Boys [Music] [Music] [Music] surrounded by the stunning Vineyards of the Sierra Nevada Foothills is Murphy’s California a picturesque destination for wine enthusiasts and tourists this historic town has been home to Murphy’s hotel for over 15 years the hotel has an illustrious history presidents and legends have come to stay in this national landmark Partners Brian Kevin and Joel bought the business 9 months ago I own a hotel with my two partners I run the dining room I’m the dining room manager Kevin he’s our bar manager and Joel he’s our Chef wonderful thank you but it’s no one’s job to look after the hotel it’s historic but I think it needs to be maintenance the historic rooms I wouldn’t even stay in them and I get a discount that’s air conditioning that’s in behind the historic main building there are 20 so-called modern bedrooms the modern rooms are maybe modern in the’ 60s these are modern this kind of looks like my grandma’s room smells like it too sadly the owners are too busy drinking in the bar to notice the state of the hotel oh man owning a bar at 32 years old can be just a great party 7 days a week give us some tongue raty some tongue you ladies out doing tonight what do you think we’re doing Kevin and I we love women and it is a passion and we have a lot of them coming through here don’t act like you’ve never done it they’re not just all young we got the cougar Clans coming through here we are not one to discriminate we take customer service to the next level cheers boys and girls up you know as a California American male we were taught during college that uh it’s good bin drinking is fun why is everybody empty I am the fun captain she tried to ruy me you see that I am kind of The Party Guy I want to make everyone have [Music] fun right now they’re just kind of drunk idiots if you’re after a drunken lap dance you’ve come to the right place if you want a good night’s sleep you best go elsewhere I’m exhausted and I keep hearing these loud noises outside these people are drunk and it’s driving me crazy and I’m going to go complain can I do for you I have a room upstairs sure it’s reallyy the saloon is always first and then the hotel just seems like an afterthought this registered national landmark has been run ragged by the owners and is hemorrhaging money if the guys continue to party and not take things seriously the hotel is just going to close down if I don’t do something fast this place won’t last another 150 days let alone years I think Gordon is going to say [ __ ] this place that they’re screwed [Music] I’m on my way to Murphy in Northern California that this place is in among some of the most stunning Vineyards anywhere in the world what a beautiful Town how busy this place is as well listed with stunning little tasting rooms now anyone lucky enough to be running a small hotel here should be sold out every night if they’re not they must be doing something seriously wrong [Music] wow this really is historic Murphy’s hotel has been placed in the National register of historic places nice wow hello how are you I’m good how are you doing so first name is Kena Kena name is it always that busy out there um we usually do get pretty busy on the weekends UMC we have about 16 tasting rooms just within walking distance of the hotel I love how historic this place is but have you not updated the furniture since 1850 l h my God it’s like going to your grandma’s funeral my god there definitely is a difference between historic and then tacky and old what we have is definitely tacky looks like someone’s died in those chairs so you’ve been here for a long time about a year and a half and what’s wrong with the place um well management the owners the hotel was owned by three guys they’re in their early 30s there’s Kevin Joel and Brian and they really like to use the hotel as their playground um partying drinking giving lap dances to the bar patrons so uh just there’s lap dance lap dances while they’re bartending the owners if they continue partying and giving lap dances in the bar and acting how they’ve been the place is just going to keep going downhill we put you in the presidential ulysis es Grant room this is the actual bed that President Grant slept in except for the mattress we did get rid of that what’s the last box for um this is our display room display room yes so guests and customers can come up and take a look when were these last um replaced um oh [ __ ] I can’t really tell you that uh it sounds like I’m in a museum so am I a guest or an exhibit you’re a guest tell tell people come on through everybody take a look inside close the door close the door okay we’re going to be on display today it’s usual for the tourists to come through sometimes and if a guest checks in and they just for some reason forget to close their door they’re going to have people crowded around looking at them they literally come over and they hello hi well that’s embarrassing it’s like a golfish bowl in here ladies thank God I wasn’t in my Underpants is that normal they just come and have a look around um yeah you know um we normally get complaints and there’s really no one that handles that or takes care of it but there’s three owners yes a lot of the time they’re busy bartending or drinking or lap dancing lap dancing exactly insane unfortunately okay I’m going to unpack can this uh room be off the tour for a while we’ll see what we can do thank you you’re welcome First Impressions I mean it may be steeped in history but it smells like the room steeped in piss this time for a bite to eat I hope the food here is less stale than my bedroom it’s a start return employ of the month he looks a happy bunny oh hello how are you party one party or one not party for one uh good to see you I’m Brian is that the same congratulations employer of the month um do you get a bonus do you get a night stay do you get a free dinner I’m one of the only employees that never made the cut yet I see you just put yourself in and what are the owners going to say about that I’m one of them I’m Brian stop it yes come on hey the other owners got their shot on there you’re the owner and you made yourself the employee of the month yeah are you the man with the G string the G string reception was telling me you do lap dancing oh no that would probably be Kevin I see I don’t know my Booty’s a little too big to do the Dan okay I was going to say I can’t wait to see that one I’d love to meet the other two the chef and the lap dancer are they around are they you want me to bring them out yeah all right Kevin and Joel and I we’re all equal shareholders in this business but it was my plan you by the hotel hello Kevin Kevin Gordon good to see you and this is Gordon Joel Joel so you’re the lap dancer there’s might have been some lap okay right okay I’m Dy to find out I’m not I’m not a professional maybe once in a while but okay fine I’m a wild one when I started drinking I get a little stripper action going on or they get a little Rowdy and can be the the most fun that any young adult could ever dream of so obviously the chef yes restaurant manager and the lap dancer bar manager bar manager so who’s in charge all three of us no such thing so who runs a hotel who’s in charge of the the hotel hotel manager job doesn’t really entail much with three owners normally there’s one that takes the reins and two other silent none of you sound and look like an owner well Gordon thinks we don’t look like owners but what what’s the owner look like we bought the hotel 9 months ago right and you guys go back a long way just kind of met each other 15 years ago and I’m confused whether it’s the Three Musketeers or three stoies anyway I’m going to have a quick bite to eat it’s been a long journey but I’m excited to taste the food thank you nice to meet you thank you Gordon’s going to love our food Joel works really hard at everything he puts out everything that comes out the window is a great product I can’t believe this hotel is owned by three guys uh with a pink dining room Pink’s the New Black well it’s like a girl’s bedroom ghastly Gastly um any specials on today we had a fresh Alaskan hbit MH with uh now that I’m talking to you I’ve completely forgot no we had we had the halit with a oh this is the first time I forget specials don’t worry why don’t you check with the chef all right I will you are the gression manager right yes and I was a server too gression manager and employe the month and owner yes all the above employe the month I’m going to take that plaque back can’t even remember the specials hey Joel I forgot the special just now Ryan just kind of forgot our specials I have seen him do that before the special is available tonight the macadamian en crusted halit right let’s try this scalo Entre Lam shank and then what’s the calari door what does door mean it’s a d it’s just a calamari steak oh I’ll go for that as well okay thank you I’ll keep the menu thank you very much you’re welcome once Gordon has a bite of Joel’s food it’s going to put a smile on his face [Music] guaranteed thank you here we go sir Scaro in a red wine garlic sauce red wine garlic wow jeez absolutely rancid have a little taste I mean nothing it’s hot uh yeah strange taste you know that’s the first actually the first time in the history that I’ve eaten es cargo oh really and um I’m going to say that I I don’t like it in any way no the es cargo tasted like a dirty funky disgusting flip-flop if you saute a flip-flop I think that would be a good good way of describing it that was [ __ ] disgusting I I want to run home and get some mouthwash for sure but I don’t do whatever you need to all right yeah cuz I stink want ice water for you please do you have any um little samples of like wine flights anything Regional we have talked about that but we’ve not implemented it so you’ve been talking about it for 9 months but you haven’t actually done it yet no one’s even bothered the sort of wine flight so trying to get it together so so you’ve had this place almost a year and you haven’t implemented something that this town thrives on correct right mhm have you tasted those a scar have you yes SC go not really have you have you eaten I mean you eat here right not very after and when was the last time you guys sat down and had dinner in the restaurant never sat down with all three of us together strange strange I’m getting slightly nervous that nothing actually gets done here anyway I’m living in hope I have some more bread for sure I got the lamp chank coming right out oh my God that holy crap what is that this is our lamb shank that’s a weird looking lamb shank visually it looks like the biggest plate of puke I’ve never personally had lamb shank ever been here I do not like like lamb you’re the restaurant manager you don’t like lamb don’t eat the Scargo I’m the yeah I’m the restaurant manager but I’m not I’m not the chef wow in England would just call that a dog’s dinner what a mess I do apologize again I’m totally embarrassed that our food is his quality I’ve always thought it was better hey Joel the lamb shank he mentioned that the vegetable gravy goo was a little little too much oh okay I’m going to run this out okay so fine d in Frozen inevitable nasty exent I mean I’m amazed what’s this one this is the calamari D State that’s not garlic in there again is it there is garlic in there again jeez it’s just how that dish is prepared everything’s just that’s the first bite I’ve ever taken of that you know this stuff’s on the menu right you’re aware of it this is your hotel yes yes I’m not being punked here that you guys are their owners we are the owners the owners haven’t sent their sons in to take the hit no no you definitely are the owners This Is Us okay how do these three stoi qualify to run an Historic Hotel like this if they can’t even get the food and wine right how are they going to improve the hotel I feel like being looked after by college kids do they want me to come out or probably be good yeah come on out sorry weren’t very impressed uh no I mean far from impressed have you ever actually stood back and looked at that lamb shank as a dish it’s most horrendous the most dreby disgusting looking [ __ ] lamb shank have you given up no no no way we just started we’re not given up yet you just started yeah have you ever just walked in from outside checked in went up to the rooms and you’ve never done that never have you ever done that no sir have you ever done that I have not oh my god what have you improved on since you bought it truthfully I make people laugh and smile every day seriously what have you changed weekends we serve breakfast all day what have you changed menu wise menu um [ __ ] hell um I got one two three three idiots that haven’t changed anything you don’t stay here you don’t eat together you don’t criticize of food [ __ ] reception [ __ ] room [ __ ] food and three clueless owners owners my [ __ ] ass I’m staying at Murphy’s hotel in Northern California and after being put on display for gawking tourists everybody and eating an atrocious lunch I think I would just call that dog’s dinner what a mess I need to see the three nitwit owners in action word has got out that I’m in Murphy’s and the hotel and restaurant are full of people I feel sorry for all of them can we get something else are a little too vegar Joel is running the kitchen are burn chicken burn Kevin is getting busy in the bar and Brian is overseeing the dining room it should be Geer nice Geer cheese isn’t it Geer cheese Grier gerer I mean so guests trying to check in are left offend for themselves we ask you to check in for the room is um every okay uh yeah we’re waiting we went up to the front desk and there was nobody there so trying to check in for it’s one of the owners N I guess I just arrived to check in you get Brian urgently or Kevin what about it about a guest checking in oh guest checking I can do that yeah would you please I’m sorry excuse me you should to come looking for us in the bar so that’s what happens when gu come in late they go to the bar looking for yes that is uh how we do it have you ever done that checked in and then found the reception closed and went into the bar looking for key no no I’ve actually only stayed at hotels probably only matter 20 times in my whole entire life W and you’re a hotel owner yeah so how come you guys don’t have anybody up here we got the bartenders or servers like me sometimes taking care of it just sign the top there please once guests get to the rooms they’re in for another unpleasant surprise I don’t they all the bar people out see the [Music] French let’s wait for the drunkers to home before we open that up have a good night it’s very noisy in there from the bar in the street the owner’s ignorance is evident in everything I’ve seen so far I’m curious to see what it’s like in the parts I haven’t seen like the walkin [Music] fridge the [ __ ] that is raw pork cooked chicken sat next to each other [ __ ] disgusting oh sh seen this before I had my lunch fine dining it’s not at that [ __ ] it look at the mold growing on there you dirty [ __ ] bloody H there’s mold at the sides too oh Jesus Christ look at the [ __ ] mold on that this is absolutely disgusting bollocks wow I know so the walk in how often is that fridge cleaned out twice a week twice a week yes everything out yes yeah yes come with me all of you all right especially the owners sounds good sounds good really [ __ ] H oh oh wow oh wow oh wow [ __ ] moldy tortillas there should not be [ __ ] any moldy [ __ ] food it’s [ __ ] horrible and when was this made last Saturday no I need days ago just smell that need to toss it I know that I’m this terrible you should be [ __ ] ashamed thanks okay no it’s not okay what is that be black mold what this supposed to be Thai Chili marinade Thai Chili marinade but I don’t know if it’s been used in a while the sauces was from a chef that had been there like in 2006 or 7 or something this is exactly the same way as you run this [ __ ] hotel you don’t give a [ __ ] I give a [ __ ] I give a [ __ ] if this is your dream of running a hotel then how about Manning up but I look like [ __ ] owners we are this is [ __ ] unacceptable and it’s not going to happen anymore have you checked out because you should do the thing say to these two [ __ ] it he has not checked out he’s can you talk I have not checked out and I obviously I need to pay more attention and do better at my job how any of you can run a [ __ ] business do you ever see three CEOs three [ __ ] marriages three [ __ ] executive chefs H it’s like dumb Dum dumbest since my arrival at Murphy’s hotel in Northern California you should be [ __ ] ashamed I’ve been appalled by the three clueless owners it’s like dumber dumber dumbest are hideous water’s freezing Place stinks room my ass this place is such a mess from the awful Decor to the Dreadful food to the drunken partying all night long I need to get the whole team together and find out how it’s gotten into this state morning guys good morning morning let’s uh go downstairs have a meeting sounds good yeah with [Music] Co man that was a bad night’s sleep the noise above here was insane I came back downstairs last night and Brian’s ripping his shirt up shouting screaming about hey shots are all on me is that normal is that really how these managers operate when they’re off duty they come behind the bar turn up the Jukebox when I’ve already turned it down pour themselves drinks it’s their personal frat house how does that you feel your employees are concerned that you’re drunk in the bar when do I treat you all [ __ ] badly what yeah when it comes to scheduling how many days that you guys have asked off for that you didn’t get off there not more asking if you’re going to run a hotel it’s not about having a [ __ ] party it’s about levels of discipline well just so you know it’s not happening anymore but I’m not going to be as happy sometimes for you guys you are as good as your team they represent you and based on what I’ve seen I don’t think you represent them prop properly okay you go first and tell these owners what they need to hear we lose a lot of reservations when we don’t have somebody to answer the phone you know when we leave the front desk we put the phone in the bar after 800 p.m. we are the front desk we are the bartenders I saw that last night yeah they don’t answer the phone because they don’t hear it we need online booking you know what that takes away online bookings as a front desk girls you know we’ve talked about getting rid of the front desk and putting a computer there and we don’t have a person there s check in so how feel about that so they complain you threaten to fire them yeah no that’s not what it is yes it is yes it is you just totally attacked me I’m afraid to express my feelings I’m afraid I’m going to get fired really nobody’s threatened here with their job nobody has it you never threaten me by being fired I have before were you drunk yes you were drunk so that’s the message I’m trying to get through to your thick skulls your threatening staff whilst inebriated this is crazy people who deserve to be fired are these three standing here there’s no structure somebody needs to step up and run the business and everybody else follows suit you need one general manager that’s the issue you need to be a leader from the top that’s one person there can be 25 owners but there needs to be one general manager if something doesn’t change you guys are going to lose this place okay which one of you is capable of stepping up and running this business I’m at Murphy’s hotel in Northern California you’re the owner and you made yourself the employee of the month yeah the place is a mess because these three owners behave like Frat Boys cheers boys and girls and none of them is a leader you checked out so the staff don’t know which way to turn I’m afraid to express my feelings I’m afraid I’m going to get fired things have got to change there needs to be one general manager somebody needs to take charge [Music] I’m going to take charge I’m going to run the business I’m our leader out of us three it’s going to be me guaranteed if you’re going to run the hotel you got it you run the hotel yeah 100% so Kevin and Joel are you willing to give him the support and the automony to actually run this place yes yes Brian it’s your responsibility now to General manage and absolutely tow the line but there are three rules rule number one to stop drinking on the flooor gotcha rule number two you have to stop working the floor and rule number three you have to [ __ ] grow some M fast M Brian does know the most out of the three of them so I really do think if he could stop his partying ways he could really do it trust me if you don’t grow up now you never will I got it it’s a hotel not a frat house I’m not going to be drinking and uh I’m going to be owner thank God for that thank you thank you I’m going to change I’m going to be more of an owner and not a friend/ coworker and they’re going to see a different Brian the future of this historic national landmark is now in Brian’s hands and I need to know that he cares enough to be responsible you are young ambitious slightly naive mhm you’re going at it in totally the wrong way you’re on the verge of losing this business hopefully and how would you feel if you lost the business it would be horrible it would be horrible cuz that’s already years of uh 60 hour weeks it’s horrible I’m here to help but I want you to understand the mess you’re in it’s not good all right do you understand I do deep down inside there’s no two ways better you’re a fun guy you got a lot to offer yeah but just stop being irresponsible and just man up yeah for sure and you can do it okay I want to make this work mhm from today on it’s going to be a change business is different all right okay okay could see that smile back in your face thank you I’ll see you later from this day forward I’m a change man and the business is going to reflect all those changes with Brian ready to take charge as general manager my design team has worked all night to modernize Murphy’s hotel and now it’s time to reveal the new look hotel to Brian and his team Brian how are you sir Gordon good how are you doing look very smart you good you’re doing I’m good good to see SM ladies how are weing great good right welcome everyone the new and improved Murphy Historic Hotel are you ready ready all right do this welcome to a new Lobby no way is last exactly how it should be when I first walked in I was disappointed it was just like a big anticlimax now you have a nice warm modern feel the minute you walk in your guests will arrive and feel welcomed take a seat isn’t it beautiful yes amazing beauti Brian what do you think beautiful absolutely beautiful welcoming awesome colors the contrast the war perect what Gordon has done with the lobby is beautiful now that blue it’s so warm it’s so welcoming it’s awesome this is a Historic Hotel you’re ex president stayed here yes that doesn’t happen that often in hotels thank you much pleas thank you thank you hold on there’s more there’s more from 6:00 this morning you’re now live with online bookings you don’t go anywhere near the bar you know what time they’re coming and you are now in the 21st century are you ready to see the presidential suite yeah yeah all right president come and see my room let’s go I think you going love it let’s go jump in oh my God now it is awesome oh my goodness this one’s been freshened up this one’s been spruced up you need that Vibrance the minute you walk into a room you want to feel wow I’m stepping into history but I also want some comfort this is fit for a president our president now could stay here Obama would be be okay to stay here now it’s still feels historic but it’s a bedroom not a museum exactly so you know make sure that when your guests are check in their bedrooms are off the tour did you put a new is there something on here to make it softer all been lined and cushioned for me the big problem wasn’t the Linens it was the noise we’ve come up with a solution to narrow that down last midnight well stick to those times of your bar closing because the damage you can do to your reputation is devastating yeah we’re going to follow through and make sure that our customers in the hotel are as happy as our customers in the bar and our customers in the restaurant right you already see the rooms outside that you told me were modern right let me show you what modern is you ready yeah love this one oh my gosh I love this one no way look at the color look at this you can see why I got upset the owner’s done nothing in 9 months so we’ve done all this in [ __ ] 24 hours blown away I can’t believe the the creativity that’s been put into this place in the last few days what do you think very oh lost words inspired you know very inspiring you know listen you should never ever ever be afraid of change you’ve got to keep on going yeah got every time Brian what do you think what’s going through your mind I’ve never heard you so quiet breathtaking though I don’t even know what to say because it’s beautiful beautiful this is perfect with this kick in the ass we’re going to go forward Full Throttle going to make changes that no one’s ever seen before you ready to see the dining room yes this one the dining room where do you stop buddy look at the colors my God beautiful where’s the pink oh my God yeah gone are those horrendous pink walls I stunning beautiful color on the walls that just pop and there’s one more thing this bit you’re going to love it’s a surprise that’s going to completely change your business you the wine tasty menu is awesome the overall experience to any guest that walks through our door now I believe it’s going to be better than ever I like the pairing of the Bretta and the the wine that it goes with it’s a very nice fresh dish there’s no going back no you’re only going up now yeah oh that’s nice oh this is so phenomenal this is going to put us on the map off the charts reservations off the hook thank you Chef thank you as well as a wine pairing menu I’ve changed the entire menu in the dining room let me show you one of my favorite dishes I’m very excited about the new menu I know where I’m eating every night oh my God fresh baked lemon merang pie oh my goodness look at that thing and the real inspiration behind this was Brian’s [Applause] hair’s this new menu is going to touch a business a clientele that we’ve never had at the Murphy’s hotel and I know personally I can’t wait to eat there more often with warm and fresh rooms and the new wine tasting menu my only concern is whether Brian can stay focused on the guest experience and listen every night from now on in in this hotel is a big night let me tell you and it’s not just about the bar it’s about the restaurant and the room rooms push those tasting menus in that bar GM are you ready we’re ready um if there’s one thing you do not need as a general manager is an apron get that off all right good luck guys thank menu is a hit that fillet looks lovely guys they’re loving the food keep it going yes well done and good luck when I first arrived you saw three young guys sort of playing out running a bar and completely forgetting that they were actually in charge of a hotel but Brian stepped up and has taken that general manager role which is great news I’m hoping now that they get that party mode out of their mind and focus on the potential of what this business can bring them great job um you performed like owners tonight you sound like owners and this place you know is rocking the atmosphere in the bar is controlled the dining room is having fun the patio is full the wine tasting menu is flying out keep it the good work okay Gordon he really has opened my eyes and showed me that we need to take more of a leadership role as an owner I’ve taken you out of the employee the month I know choose one together yes we will on a monthly basis have your input throw it into the pop I believe Gordon has saved his place by putting wind in our sales again we truly did need a kick in the ass because we were playing around a little too much gentle manager remember actions speak louder words your next day you’ll hear great things I guarantee Gordon is amazing he’s a magician and I think that he came through and he transformed the hotel into this wonderful Masterpiece and I’m so thankful that he came through and helped us gorgeous Place damn I never did get to see Kevin lap dance since my visit to the historic Murphy’s Hotel the owners have finally become owners Joel is keeping the kitchen and the walk-in extra clean and he has new pride in his work I got a well done going right there you can go peek at the upstairs bathrooms one’s down the hall showers both restrooms upstairs you stay there I’m good to we here okay Brian is stepping up as general manager focusing his efforts on the hotel Brian is definitely capable of being the general manager Gordon has completely changed everything jum in Gordon brought the Historic Hotel back to [Music] life I’m in Florida to help a struggling Hotel on the beach a young owner at the helm who has no no control over his staff what is that oh boy why it’s like that I have no idea I’m faced with many challenging situations it stinks in here place is filthy really bad and I’m unsure if I can turn this place around your Chef has shut down I can’t work like this I want to go now I want to get the [ __ ] out of here [Music] midway between Orlando and Miami on Florida’s Atlantic Coast lies the small town of Fort Pierce home to the beachfront Inn and Inlet owner Brian Paul opened it in 2012 after running his family successful local fish market with his brother my job before the inlet was the the CEO the head of my dad’s Fish Market my Dad ran a business like a a real leader he had so many friends pillar of the community everybody loved him and I always knew as a child I wanted to have my own [Music] place I think Brian has a lot of schooling under his belt I’m not exactly sure that he has any hotel experience Brian as an owner is physically here sometimes he’s just like kind of wonders around Brian is a little too easygoing if it was me I’d have my hands nose eyes and ears and everything and I don’t see him doing that Brian definitely has a lot of friends at work here uh some of which have taken advantage of him in the past um I believe that Chef Ben probably has taken most advantage of him I want a beer oh yeah oh we’re having a tasty beer tonight boys Ben is a uh an awesome guy I’ve known him forever we’ve been friends forever I give him plenty of space I help him whatever he needs but I don’t muddle in his Affairs down there I think that the issue here has been our lack of consistency with our food and I mean that directly has to be attributed to the executive chef you know his name is Ben I feel like the inlet and the beach front both black Direction we’re trying to be too many things at once a nightclub a bar a restaurant a hotel a wedding venue a concert venue a place to do your Christmas party at I mean ah no military secret we have some guests and employees hooting and hollering till the we hours of the morning and that’s out of control that’s got to stop it’s bad for business Brian has to refund hotel guest money because of the noise [Music] complaints I think this place has so much potential and so much to offer we don’t want to see it fail we don’t want to see Brian fail he definitely needs to step up and help us all out to help him he he just grab those rains and start start seeing the damage that’s happening and uh start fixing it today I’m in the beautiful coastal town of Fort Pierce Florida just looking around you’re surrounded by stunning beaches marinas full of deep sea fishing boats this place is [Music] gorgeous look at this place it looks like the hotel’s closed down hello anybody in welcome how are you I’m very well indeed thank you first name is Liza good to meet you good to see you how are you doing today who is this the boss man caught it and where’s the other half gone maybe they ate it I pair of shoes couldn’t tell you it is a little Weir what you use it for I don’t use it for anything actually wow and what’s that up there that was here when I got here believe it or not that’s for sale apparently so yes so he went onto the beach picked up some Driftwood and then dipped it in some varnish yep o $22 uh-huh stop same as that one over there no insane no have you sold any of these no never no seriously and how much for the t-shirts between $12 for employees and $18 for guest so staff have to pay for their own t-shirts yes and for the guests they’re $18 yes wow so when was the last time you sold a t-shirt I sell them every day but mostly to um the employees the employees yes how long you been here the establishment’s been here almost 3 years I’ve been here almost three years as well what’s wrong with it from your point of view noise levels you know especially the one directly above the restaurant that what kind of noise cuz it’s not the the music and the people the foot traffic everybody hanging out at the bar and things of that nature so that goes on directly underneath yes mhm they end up being refunded and then they end up putting us on blast on all of these you know websites and social media and just bad reviews left and right housekeeping back what’s that for touch base with the housekeepers wow I have ack um just out of interest uh it’s Gordon here I’ve just checked in how far away are the [ __ ] rooms I mean you sound like you’re miles away hello Madam you scared her so room 16 yes and where is it please D I’m going to direct you right this way what’s that thing there we grill our wings on it you grill your wings on it yes how often did you grill wings in there every stinking day wow Jesus in fact I think there’s a Wing left in there when was that grilled chances are could have been yesterday those are the extra crispy ones and who’s responsible for this the kitchen handles all of this end of it of course you found another Char royed and these were done yesterday I believe so and they cook every day on here yes and are the customers still alive [ __ ] right room 16 yes sir this is your Caribbean building the Caribbean Caribbean Caribbean yes uhhuh what part of this resembles the cariban I think it’s bloody hell oh the bed feels like it’s 15 years old my smells C are terrible pleas is filthy really bad absolutely disgusting $180 a night for this [ __ ] all wow many bar consisting of absolutely [ __ ] all freezer over Frozen and defrosted about 10 years ago what a [Music] mess I know when I’m coming to fix a business they have various issues but right now with the information I have I am not impressed with how Brian as an owner is operating this hotel hello hello welcome to the inlet so you must be Brian I am sir the hotelier and the 34y old I do it all you do it all is that what you are seriously 34 right you know what I’m 33 I work so hard I think I just thought I was 34 you’re 33 [ __ ] me uh did you call this building the cariban yes have you ever been to the cariban yeah which part uh the Bahamas and this has been modeled on the Bahamas correct do you smoke when you’re in the Bahamas you know like that I’ve tried a couple times surely stop yeah yeah what hotel in the Caribbean or the Bahamas were you running before you bought this one so I’ve just visited the Caribbean I’ve never ran a hotel in the Caribbean so you just go buy yourself a 25 bedroom hotel on the beach with a bar and all I know how to do is run a fish market when I open this and I buil it from the scratch from the ground up the fish is fresh obviously from the market they’re so fresh right I better jump in can I show you to your table uh yes why not yeah table for you right here excellent thank you may I uh please I’m excited for the fresh fish this is so surreal bro Gordon R in the dining room what’s with the name tags I mean you’re the owner right I think I should lead by by example so I I I like to wear mine that way if I tell them that they need to wear them then they can’t say well Brian you don’t wear yours right I’m starving I’m going to get you some food right away I’m going to get you a great server okay great how are you how you doing nice my name is Kelly Kelly how long have you been here um I’ve been here about a year nice mhm and um why do the staff have to buy their t-shirts um I don’t I was never told even our first shirts our name tags you bought your name tag as well yeah we have to pay like $8 never seen that before $8 a name tag $12 for a t-shirt that’s $20 before we come to [ __ ] work wow as I look at the menu I noticed it’s absolutely massive so I decided to order the chicken wings which honestly I wasn’t surprised when they were dry then I had the lobster mac and cheese which technically isn’t mac and cheese because they used penne pasta but the worst part of my lunch was the tuna burger which I knew wasn’t quite right is that fresh it is frozen oh it’s frozen yes hold on you said Fish Market Fresh Fish daily frozen fish fresh fish what’s going on we use frozen sometimes sure and you have a fish market that you buy from yeah yep yeah um I’m confused ever since about 4 months ago everything was fresh everything I ran up a little bit of a bill with my brother so we cut back and started started ordering some of the Frozen stuff from some of the purveyors and what’s the feedback we get some negative feedback you guys have one nice thing to say I know it’s I’ll blow to the ego but you knew it was going to be something I think it was going to be everything um explain this monstrosity what in the [ __ ] is going on here this is our kiosk kiosk and effort to have products for all sorts of people balls volleyballs uh bean bagir sck bags how how busy is this how was it going I honestly uh it doesn’t do that good how many beach towels have you sold not too many Beach STS ni show me one all right be right back I’d love to see one please what a [ __ ] disaster we’re on the beach and we don’t have tell us what is wrong advertises fresh fish on his menu I want to learn more about how involved he is as an owner during an evening at the beach front checking in Susan Addison can I go ahead and start you off with something to drink okay smoke him if you got him okay hey Chef uh just give us a little quick run through how the line works well normally I run the pass and Expo Chef I’ll take care of this boom boom boom use the pass through the sauté gu and then the fry guy working with Ben I can’t really tell you what he does where’s Brian don’t know chef and Brian would just avoid him instead of trying to get to the root of the problem and I think that in itself is a problem how long have you been here uh since last December oh wow so you’ve been here a long time in your mind what do you think the major problems are lack of consistency as a matter of fact and lack of structure yeah I saw that lunch time yeah I found out about the fish not being so fresh how can you not sell fresh fish when you’re on the beach that’s our motto fresh fish so how many do you think understand that we’re selling frozen fish they probably don’t no cuz I don’t think the servers are telling them meanwhile the customers disappear yeah thank you great update thank you Brian how many of these customers in tonight know that you’re serving frozen food you know they don’t really know how the uh the market works so probably none of them they don’t know how the market Works they don’t understand how are you good how are you do you think we’re going to be serving frozen food tonight or fresh fish fresh fresh fresh why fresh well why don’t you explain to him tonight that you changed things four months ago and we’re not serving fresh fish anymore we’re serving Frozen man so uh just a few months ago we switched from some of our fresh product to some of Frozen Seafood products why would you do that they’re quality products they just aren’t the best the quality that you would expect from you know the Pelican seafood market they’re quality Frozen products yeah it’s it’s a cost thing so when I come out to somewhere like this for being on the beach of course I would hope have fresh fish where is this [ __ ] freezer around here uhz right down here Gordon so this is the Frozen bit here what’s that Frozen avocado are we not in Florida and you can’t make fresh avocado dude this is [ __ ] where’s the freezer EXC me main walking wow wow wow when was the last time you were in here I come in here once a week at least and I kind of you know just kind of look around or whatever what is this wow oh man look at raw raw chicken on top of cooked chicken I had them for lunch I am at a [ __ ] loss do you know the best way out of this is just to shut the place down it’s not an option for me what’s that in there Ben those are marinated chicken wings yeah to be smoked underneath next box those are smoked rule number [ __ ] one Ben I know Chef I didn’t do it you know I turn my back for a minute and this is the kind of [ __ ] that happens and I walked in and it was bedam mhm mhm he’s telling me this is your fault you’ve got no idea I am at a absolute [ __ ] loss I can’t work like this this is huge you now are running a restaurant cross [Music] contaminated joey yes chef who’s responsible for this um we all are the the entire is sh rule number one you can’t put hot food in a [ __ ] walking it doesn’t even go together no not at all nowhere near each other’s I guarantee you when it was put in there after I marinated it they weren’t shuffled I can give you 12 more issues in there that are bad I mean you are heading for a [ __ ] massive disaster I mean who the hell put him on top of the the other ones everybody in here knows better haven’t you trained everybody to know that I mean all I’m getting right now is excuses the kitchen needs direction from the chef the staff need direction from the owner and your buddies can someone come up with a [ __ ] solution I’m going to go in 86 the wings sort it out quickly come on guys 86 Wings someone put raw [ __ ] chicken wings on top of cookings it wasn’t me somebody else did it 86 Wings is the only thing I can do right now what in the [ __ ] is going on I was baffled and amazed the words out of Ben’s mouth where oh I clean that cooler regularly every day you want me to go in there and pull everything out clean it that is not your job to wipe the ass an executive chef I I know that there were weeks you wouldn’t show up up maybe 3 days a week why didn’t Brian step up briyan he may be oblivious to some of this stuff they’ve known each other since they were young guys or you know this is crazy so Ben goes a wall Brian does nothing about it the play starts falling apart and then he just steps back in when he wants pretty much but if this was your business you wouldn’t tolerate that I would have fir a long time ago I was all for firing Ben two months ago so I mean no excuse for that Walkin like that so I’m sorry I just couldn’t hold back anymore he doesn’t he doesn’t come to work that’s the reason why it looks like that okay that is absolutely the reason why if he’s here by 12 and he leaves by five we’re lucky I’m just I’m not James is telling me the truth I’m I’m I’m I’m here to tell you the truth you’re not telling me the truth I promise you I’m going to tell you the truth the only way to really truly identify a chef before he even tastes his food open up his Walkin that speaks volumes for any chef he’s a chef that’s given up and going through the motions sometimes I feel that way we’ve been through a lot I know he’s got a lot on his PL he’s incompetent and he’s taking your [ __ ] business down you know I don’t think he’s incompetent you’re [ __ ] mad and the sad thing is that your staff and your management and your team see it and you’re the only person that doesn’t know what’s going on and this is the way you want to run your business yeah you do not need my [Music] help what’s up party people [Music] upstairs okay uh she’s uh she’s got an issue with an allergy cuz the room stinks of smoke it’d be nice you just come up and see them or try and calm the situation down so the lady’s got an allergy and she’s already had to take a steroid and her eyes are streaming and she’s not very happy okay hello hello so are you okay oh yeah I’m fine you sure any issues water all over the floor sorry we had water all over the floor water all over the floor the refrigerator water on the floor in the oh no really I just cleaned it up with the towel yeah you still see I’m sorry damn I walked in it was no direction for the hotel for the restaurant for the Gazebo not even for the car park Ben is like a headless chicken that’s checked out and Brian’s like this scared school kid that is not qualified Brian how do you know each other uh I’m maret Brian you’re a spokesperson for that business yes can you be honest with this one yes I can the service is very bad I’ve brought people here I’ve been up at the bar myself trying to order even just a water that’s been tough you not listen to the advice in terms of sloppy service I I absolutely I I listen I do listen I do listen I do listen do you offload that to your team no I don’t I don’t so that’s why it’s not dealt with sir your experience we ordered a chicken sandwich when the chicken sandwich came out it was raw it was raw and it was mushy in the middle I could have got sick from that and I love your bar because I can come here late night and I can get free drinks two for me and two for my buddy and from one we got five wow unbelievable sir my first experience here was a Super Bowl party that you advertised and actually had some out of town guests food was very mediocre the crab cakes were like sawdust they were horrible that night after the game was over couple Rowdy fans started a little brawl uh we had drinks thrown on us wow the other thing I’d like to say is if I’m staying on the ocean I love to fall asleep with the window open and hear the ocean you can’t do that here you hear music all night long I honestly stayed here myself once I tried to call down because um our sheets were dirty you couldn’t even call like nobody answered and literally I think the biggest problem for me is the mix message it’s like are you a bar or are you a restaurant because we’re paying $150 for dinner however there’s people walking in in bikinis drunk damn listen this feedback has been crucial anything you’d like to say thank you guys you guys rock man thank you I’m telling you make you proud I promise [Applause] you here that can help lift this business and more importantly start making money awesome Brian you need to get a grip of this business and you need to realize you know what’s at stake here I need to be convinced I need to see you stepping up as a boss Ben and joery we’re relaunching that Russ tonight so I’m going to go through with that menu jump downstairs get organized and start finding your way let’s go oh man after observing dinner service I saw the beachfront kitchen wasn’t set up to handle such a massive menu so I redesigned a smaller menu that is easy for Ben to execute okay guys small menu let’s run from the top appetizers lobster mac and cheese done with the correct pasta Ben steam clams again great sharing for the table Wings off the smoker so it stays nice and crisp and a chance of running a business and what a shame un [ __ ] real coming around I never liked to leave a business but Brian simply wasn’t listening he missed the deadline paint his brother back and while it’s been a slow process my advice finally started to sink in 4 months after I left he made a decision to let Chef Ben go and hire a brand new kitchen staff on the hotel side Brian has made the guest a priority given the curfew to the nighttime entertainment hopefully now with Brian stepping up like a boss he can lead the beachfront in the right direction one potato to potato one potato two
