I love a simple recipe so I was shocked to be able to make these stuffed steak bites using just 1 2 3 four ingredients first I pounded a piece of skirt steak until it was 1/4 inch thick then I coated it with mccormic girl mid’s sweet and Smoky rub which helps create a super flavorful crust on the outside and keep some meat juicy on the inside I rolled the steak tightly with some pepper jacked cheese and pickled jalapenos and secured it with butcher’s twine using a sharp knife I then sliced the roll between the ties into individual pin wheels that were ready for the grill I seared the pin Wheels on the hot side for about minutes per side to develop a nice crust and then I move them to a cooler side of the grill and let them cook for another 8 to 10 minutes once done I took the pin wheels off the grill and let them rest for 10 minutes this step is crucial for keeping them juicy for four ingredients this has a ton of flavor
