me three these three right here it’s brother against brother in the main event I want you to listen to me and a family business is on the line it’s not the Spanish Pavilion the kitchen has been neglected the food is a mess a dead Lobster stuck at the bottom and the staff is ready to Mutiny I want to set all the [ __ ] food out tonight in one of the most difficult challenges he’s ever faced St St Chef ramsy tries to save a family Legacy if your grandfather sat on my table today he’d be beating the crap out of you that is spiraling out of control that’s tonight on Kitchen Nightmares get out of here w [Music] Harrison New Jersey is home to the Spanish Pavilion located a mile and a half from newark’s historic Ironbound neighborhood an area highly populated by Spanish restaurants the Spanish Pavilion was opened by a man ahead of his time Antonio Fernandez my grandfather was a Pioneer in the Spanish cuisine he opened up in 1964 the first Spanish restaurant in the state of New Jersey they retired after 10 years very successful and then came out of retirement to open the Spanish Pavilion in 1976 Antonio finally retired for good in 1996 leaving the successful Spanish Pavilion to his daughter Belina and her two sons Jerry and Michael table 11 please Ma when we took over the Spanish Pavilion was the place to be it was a line out the door 5 years later everything still down the to the customers come playing you see the same old menu the same old dishes you know flavor blend oh Flav that sauce is good I don’t care we’re like a casual Family Restaurant and we have to wear a tuxedo and you’re serving people with shorts and t-shirts it just doesn’t match looks like a you’re in a wedding party in 197 three Michael and Jerry they don’t care anymore they don’t like to put time in the business where’s my brother Michael little by little stopped cooking you got to be here more often and now it’s out of the kitchen more out than in I’m dying I have a drink my staff might complain that I’m not here a lot but as far as I’m concerned I don’t know what I’m doing Jerry doesn’t do anything so the mayor’s coming to pick up lunch he’s always on the phone he’s always this he’s always that I’m a councilman in my town tomorrow night we’ll celebrate Victory I smell it in the air and I am out of here more but sometimes I don’t want to be here enough because Michael can get a little tough what the hell happened to this [ __ ] a with the lobster bis oh [ __ ] screaming and yelling I guess it kind of wears you out you know there’s a real easy solution for this [ __ ] problem Michael what stop it Michael stop it Michael and Jerry have a lot of differences and I find myself in the middle I don’t want to hear anymore about the situation that’s too bad my mother is at this restaurant right now just to make sure that my brother and I do not kill each other what do you need huh nothing get out of this place needs Big Time help I don’t know what to do on a Saturday night maybe I’ll do 10 15 20 dinners that’s not paying the bills I still haven’t even paid my fish guy I got to pay my fish guy we’re in a debt over5 $600,000 I’m scared we can’t support our families on this business so it’s a stress I’ll do anything it takes to succeed Spanish Pavilion is all I [Music] got hello hi how how are you somebody die did somebody pass away no no you all look immaculately formal but tuxedos Undertakers at a funeral how old are those suits they are beautiful huh made to measure thank you thank you thank w wow wow wow these guys are stuck back in the 80s they look like little penguins and they’re wobbling back and forth with their little you know little tuxedos Hi how are you uh slightly under dress my apologies no you’re you’re okay I’m very nervous about Chef Ramsey coming into the restaurant I wasn’t a fan of this idea Michael was and I’m a little nervous I’m the mom okay great sorry first name excuse me balina where’s that from from Spain oh wow would you like to come to the table I’d love to this will be Joe he’ll be your sir Jo welcome to Spanish Pavilion very happy to see another unique tuxedo wow thank you very much you wear this every day for lunch yes lunch and dinner anyway so when did the Spanish pav Mo 1976 wow take me back to what it was like in his day um my grandfather worked 7 days a week at 75 he would jump behind the broiler and do the meats I mean if he were in his prime right now I know he would be doing a better job than we would are you’re here 5 days I’m out a little more lately because I was elected as a committeeman in my town politician yeah I enjoy it I really do Jerry don’t care for the business anymore if you know this business you cannot be do politicians or something else my brother and I both went to Johnson and Wales University for this and I worked the front of the house my brother did more of the culinary end and he’s the chef to cuisine my call him a chef to me he not a chef he’s always playing on the phone instead be cooking it for the customers he um well I don’t know if he’s the chef but he’s in back there quite a bit thank you have a little read no problem thank you listen and no playing around right now I don’t worry about we’re going to nail this put your phone away are you ready oh yes let’s start off with Lobster biscuit okay sir um I’ll go for the uh Marin is one how special this wonderful another this the people the chicken and garlic sauce on the bone love it beginning I walked in I thought it was a funeral now I’m in Spain you got me back okay brilliant I hope you enjoy everything yeah I can’t wait I want to make sure you got nothing to do with this order I ain’t hanging my boys to drive but I’m so confident over seeing my guys that I got nothing to worry about these guys been by my side 15 years no go go go man go let’s see what he thinks it just looks disgusting very cream is it always this creamy yes cream like it just looks like lobster was dead before they cooked it they’re from the lobsters from the tank you want to take a look okay is he dead no I think they’re just sleeping he must be dead we keep a good eye on this you keep a good eye on them surely not he’s [ __ ] dead a dead Lobster now he’s gone is he what I’m concerned about is everything else in there they’ve been feeding off that Lobster then they become full of bacteria that is extremely unacceptable dangerous people can get extremely sick with that I’ll get rid of this right now okay please can you take this all right love you bye you should smelt [Music] it it don’t smell that Lobster’s fresh even though it died it’s good this is my Michael hey Michael are you good good I’m doing fine thank you I know you saw a lobster in there that passed away well I try to we try to check that every day I was just slightly concerned to see the dead lobsters in there I try to freeze them right away and then I make the bit from that okay you must be busy all thank you enjoy thank you huh okay I’m going to serve you right now the chicken and garlic sauce uh what is all that in there the gree olive oil garlic you got a little bowl it just drains for that out it’s like they’re swimming thank you oh dear it’s like a [ __ ] X on Val there too much olive oil for you you think there’s too much olive oil in there it’s like a heart attack waiting to happen I hope there’s a hospital nearby the chicken tastes absolutely Dreadful I just want you to taste the chicken just taste that it’s it’s dry you sound like a politician now okay I’m not [ __ ] around that’s gross do me a favor can you ask your brother to taste that yeah I want you to try this what what’s the next dish P the P the P what did Michael say he’s trying it right now we’re going to find out okay fine what do you have to minutes we’ll have a chat together yeah please thank you uh Chef you like goop some um it’s very kind but I’ve lost my appetite thank you are you doing stuff purposely wrong or is this by I mean is that is overcooked all right all right you go sit and listen to he’s right about everything there’s nothing I can do about that right now I feel utterly embarrassed and hum the way food went out the way it did it killed me okay I’m going to get straight to the point [ __ ] bis dead lobsters and the player the burnt [ __ ] at the bottom this is your grandfather that put this thing together was he sending food out like that no no what was wrong with the chicken and garlic the chicken was way overcooked maybe the piece you had it was dry but I finished the plate did you cook that dish no I did not cook any dish ises here today what do you actually do Michael I don’t taste everything but I try to taste as much as I can you’re the last line of defense out of every dish that I had there today what did you taste of mine every single one at least when it came back when it came back if your grandfather sat on my table today he’d be beating the crap out of you I’m proud of what went out today this is the food I do this is how they cook it and I know the food over here is good you’re [ __ ] dreaming Michael Hi how are you enjoy your meal tonight welcome to Spanish after an afternoon that included a dead Lobster in the tank a miserable lunch and a head chef that doesn’t cook Chef Ramy is anxious to observe a dinner service at Spanish Pavilion can I get chicken and rice chicken and rice I’m going to try to boot I’ll pick my own L from the L tank for you coming up where’s um where’s Michael he just sitting at the bar at the bar how you doing bro good how you do nice to see you Michael can we get ready I’m ready Jerry ready see how ready you are no one’s really in the back of the house you know observing and making sure everything’s 100% I think my brother should be monitoring that watching it despite head chef Michael being absent from the kitchen dishes are being sent out there go the heel ready unfortunately they’re on the cook you want me to cook them a little more it’s not done enough not done enough they’re also coming back said these are undercooked and a little chewy undercooked yeah all right it’s raw on the inside look at that God that’s completely raw is raw yep is this normal yes that happen a lot of time it shouldn’t happen but they happen a lot of times the kitchen have enough system is’s not one person charging the kitchen it’s supposed to be M with dishes coming back Michael jumps back into the kitchen this came back Michael what was this I I don’t know what that is but so does Jerry and both brothers are trying to take control of the kitchen Michael yeah take this off the window right now I don’t know what you’re pointing at J you’re driving me nuts I won’t let my brother dictate what I do or how I run my business give me those crab leg right now those crab legs have to be finished C do what you’re doing done cooking to come out do what you’re doing I am doing what I’m doing I’m telling you about them snow crabs Michael can anyone work together here I me this is absolutely [ __ ] hideous king crab legs already out no this is just snow no there’s no king crab legs out my gosh was going to take this long I would have definitely Mike was in the middle he tried to do everything and you know he got conf he confuses a lot of people I need an order Spanish potatoes and rice and I want together or separate it doesn’t matter I don’t give separate stop yelling I knocked you out right here you hear me we need to get organized big time everyone’s ning with each other and it’s like no teamwork anywhere no I want the I’m going to go home in a minute okay me too I got to go home too okay give me those lobsters give me those lobsters people are waiting they’re right here where do you want them up your ass a minute give them the food that I I want the customers are waiting for the food there’s now chaos at Spanish Pavilion I want the [ __ ] F out leave me a [ __ ] alone leave alone and it’s all too much for Michael talk to me later get out of here Michael Michel get out of get out of here stop it get out of here Michael what’s the matter with you what I’m saying stop him stop it Al Michael stop it a no way you never ever seen such a disorganized fragmented service ever ever disaster confusion in the kitchen chaos in the dining room lots of confusion Michael I thought you were supposed to be running the kitchen I don’t think you realize how bad tonight was I’ll see you in the [Music] morning after a night in which 21 dishes came back during dinner service that’s completely Raw oh my God was Rock Chef Ramsey comes in early to do a little investigating what is in there they’re not drumsticks they’re crabsticks just dumped in here at top of another bag of Alaskan crab no dates No Labels how on Earth are you supposed to run a business when you’ve got no idea what’s in the freezers what is down here my God it gets worse look at it is absolutely jam-packed chicken after chicken after chicken my big worry is how much chicken does this restaurant really need I mean there just bags of it and not only that but the smell is horrific oh my God look at these fets I’ve seen less packs at an army base it’s over 50 packs of meat and whoever’s buying this needs to be fired now what worries me about this is there’s one more fridge [Music] upstairs what is that [ __ ] pigeon oh my God it’s never ending just when I think I’ve seen enough there’s more look dead decomposed soft dead oh that’s the snails o hell what is is that in there that is a raw dead Lobster that is disgusting it’s 2 hours into Chef Ramsay’s inspection Michael balbina and Jerry arrive unaware of what Chef Ramsey is doing and what he has uncovered morning morning chef good morning I just need you for 2 minutes who in the hell buys produce here who who’s responsible for that I am you are [ __ ] pigeon what I’m trying to look at are the profits the purchasing the thousands of dollars waste these here they came in yesterday that’s dead let’s have a little look around here Jerry please and you wonder why I don’t like your sauce that is a dead [Music] Lobster and the freshest thing in this kitchen is that pigeon flying around and he’s lucky he’s still alive I thought that the kitchen was in somewhat disarray did I think it was that bad no I’d love to turn around and say that’s it have you seen what’s downstairs in the fridge where do I start with this look at all this [ __ ] meat here I wanted to make sure I was ready for whatever for whatever help me Michael for what my whatever what came your way I don’t know what to expect you’re burning money you haven’t [Music] got why is this like this and what happened Michael somebody’s not doing their job in in the kitchen there expensive produce head this is ridiculous yeah my fault I and my fault on our refrigerator I’m disappointed that so much was ordered in advance there’s no excuse for that spend some time together I’ve got to wash my [ __ ] hands before I get diagnosed with [ __ ] stefy you need to concentrate you know what maybe I’m overwhelmed mom maybe I’m trying to do everything and I can’t maybe the office the ordering what’s the most important I got to iron that out this is the most important and I try my hardest I don’t know what to tell you about about all this meat and everything here I’m out of here right now it’s overwhelming I just don’t have the answers [Music] B this is so sad you know that what would your father say if he walked in here and saw that no my father of course would be upset what I saw down there today it’s not the Spanish Pavilion it’s not what I was brought into the quality of the Food meant a lot to my father It’s upsetting and I would hope things wouldn’t get to the extreme that I have to close the doors I don’t know right now what’s going through his mind his concentration right now is totally off he’s all over the place it shows Jerry has to put in a little more too and when he’s here he should concentrate on the restaurant forget all your politics Jerry needs Michael Michael needs Jerry they now have to roll up their sleeves work together but more importantly they got to set the differences aside as brothers and stop being stubborn cuz that’s what they are and the business is [Music] fragmented today Chef Ramsey is determined to move the Spanish Pavilion in the right direction and he knows one step is getting Michael back to where he belongs I want you to think of something that you want to cook in the kitchen cooking something that go on tonight as a special yes chef right out of college I had a lot of passion I had a lot of creativity I would come up with dishes a little easier but I don’t know if I’m going to be able to come up with something that’s going to impress the chef right first of all I want to do a chicken and garlic yeah a modern version I want you to work with me at the same time I started off with olive oil start off with butter it’s going to burn I’m excited about having the opportunity to learn from one of the top five most famous chefs in the world you got that nice so seere on the chicken from there and you put over the top and then just scoop up a touch of that sauce modern spanish cuisine what do you think that you want to cook my grandfather’s really well known for for some octopus okay and I want to make some octopus with nice go for it I’m nervous right now I hope this dish comes out right through the years I’ve lost some of my passion for this kitchen so far it looks good I know that Chef Ramsey can help me by bringing my passion back and I’m looking forward to it this is the octopus okay and um roast potatoes yes yeah good it’s nice yeah I like it presentation as well I like it and tonight want you this side of the line right yeah yes chef Chef Ramsay’s chicken and garlic dish and Michael’s octopus special are going on tonight’s menu the chicken dish is a modern version of a garlic chicken but after serving the same old menu read the special back to me I’m sorry right 20-year veteran Joe is having a hard time with the change chicken a chef on the bone with the garlic chicken Chef on the bone come on you can do it Joe yeah but you making a nervous now I’m making you nervous yes just put your head in there for 2 minutes cool it down head in there that’s it there you go stay there for 2 minutes so nice Hi how are you can follow me please thank you enjoy okay guys let’s go yeah Chef Ramsey knows the success of this restaurant depends on on Jerry and Michael working together Michael yes sir I want to look at you yeah and I want this level of communication much better than we had last night so tonight both brothers are assigned to do what they do best Michael cooking behind the line all right listen try to take care of this area and Jerry running the pass Michael listen at me look at me one no look at me one minute if the [ __ ] hits the fan I want you to listen to me yes sir no I mean it yes sir okay I got to admit I’m a little nervous right now I don’t know what to expect I’m afraid of failure might [ __ ] up but just remind me we can handle this all right we’re going to see the chicken today is the chicken uh our Chef a little wine colge it is from Spain cherry cherry wine okay L Lama juice and little touch of butter there goes the first sticket right let me have a chicken special Mike first order comes in there’s a special one right it’s good it’s good it’s like perfect bro but it scares me I just don’t trust I can see in his eyes he’s a little nervous so hopefully we get the night okay I’ll take that chicken and garlic out first one of the night go Table Six despite Michael’s lack of confidence I’m not going to be able to do it the specials are not only leaving the kitchen oh wow the customers this is really good are thrilled with what they are receiving delicious I like it wow with the dining room now full and orders pouring into the kitchen I don’t know what’s going on Michael not used to being on the line is starting to buckle under the pressure all right give me table three or six we got to get this food out there’s no rush well there’s a little bit of a pressing now we’ll let him wait well it’s been taking off for a long time who on the way uh Joe Joe is it me or food’s taking a long time to come out yes that’s too slow too slow way too slow tables are going to get up and leave in 10 seconds I need table 13 it’s about four 3 minutes away don’t keep asking if we have all these tables waiting for food and Michael’s overwhelmed with his kitchen duties and I need him to focus just put it on the [ __ ] plate right now shut up come on guys as tensions escalate in the kitchen very little food is making its way out to the dining room a long time and one customer who was lucky enough to receive Food the chicken’s dry and rushy isn’t exactly happy ever had chip I didn’t like it Cherry it’s not normal it’s not [ __ ] normal that one chicken that just didn’t smell right oh come on oh no Jared yeah Michael Yes urgently quickly smell let’s go no smell it don’t just say [ __ ] yeah it’s gone you can’t serve that [ __ ] tonight I felt utterly embarrassed and humiliated at this point we’re just going to shut it down oh stop stop it’s an hour and a half into dinner service and while Jerry and Michael continue to clash in the kitchen just put it on the [ __ ] plate right now up Chef ramsy discovers something disturbing oh no spoiled chicken in the Spanish Pavilion you can’t serve that [ __ ] tonight oh no Al have we got chicken in the fryer did you pass that chicken hey I got one don’t serve it don’t serve it don’t [ __ ] dare s go get me a chicken let’s cut an order real quick fresh right now Michael how many fresh chickens are downstairs a case and a half a case and a half downstairs in the [ __ ] fridge and he’s serving you that sticky [ __ ] you’re cooking it and it’s off you know I don’t know why that chicken got there we got fresh chickens downstairs you know what we got to use that fresh chicken then but when you’re in the weeds you have to focus all right we have the chicken and garlic they’re using the one from downstairs than you thank you if you’re going to keep the customers waiting you’ve got to make sure it’s right I’m not going to let it crumble go get it we got to get this food out give me that chicken and garlic let’s go Jerry you’ll get the chicken and garlic when it’s done please ow ow give me table two [ __ ] this give me table twoo that’s it with Jerry clearly stepping up as the leader take this to the table too the evening is salvaged and food is leaving the kitchen once again look good everything’s coming out right now at the end of the day getting that food out is like a relief thank you you might have had to wait like an hour but we’ll get it down eventually honestly tonight was better every lik the specials but let’s not get too excited about tonight because the quality control has to be much better you’re absolutely right and Michael your cooks are passing you stinking rancid chicken but you didn’t spot it Jerry I thought your performance tonight was Bloody good thank you sh tonight was better hopefully we’re headed in the right direction good night with the Spanish Pavilion at least headed in the right direction Chef Ramsey and his team work overnight to give the Spanish Pavilion a modern makeover good morning good morning good morning chef good to see you all let’s be honest not much has changed over the last 30 years right correct today is the beginning of a new era and through that door is your future are you ready to see it Michael are you ready 1 2 3 come on in look at this my God nice that’s what I’m talking warm inviting atmosphere we removed the stained glass to give it a modern feel unreal and then down here we’ve increased the seating so we have a lovely banket tablecloths have gone gone all the tables have been replaced that this is Walnut it’s modern and it’s warm on the tabletops we have the most amazing China oh baby provided by tabletops unlimited awes how exciting is that I love it baby it’s amazing I feel like I’m in another restaurant and I couldn’t believe the openness of the dining room glad to see the tablecloths gone the new plates the the Spanish look I felt like I was in Spain it’s awesome nice following the much needed read design Chef Ramsey now turns his attention to attracting new customers when your grandfather opened his restaurant there he did not face the competition that you now face I really do mean competition look ho at that 2010 40 Spanish restaurants within a 2m radius of your front door having studied in the neighborhood all these restaurants are serving the same bloody food you have an opportunity now to stand out are you ready to see your dishes oh yes come with me let’s go please come through small taus is the taste of Spain authentic delicious and homemade you have to push the tapus this is what turns this restaurant around a roasted lamb Spanish meatball and a fresh tomato sauce bacon WRA dates yes soed prawns the garlic a little bit of shaved fennel olives mono cheese yeah we’re going for flavor Simplicity and we’re going for Spain I love the new menu to be different is incredible that is the key to make our restaurant stand out but just as important here are your new waiters come in come in come in come here look at these guys come here amazing they now no longer look like Undertakers you love it you love it oh baby great bab look at this look I look good I love this guy okay tonight is your night there’s nothing that you cannot do here good luck thank you Chef an order comes in who’s touching that ticket who do you think Jerry that’s right he’s I want to give it right there absolutely definit but Jerry he’s going to lose the tickets I’m afraid he will not lose it why are you talking so negatively oh no I’m trying to foresee a don’t foresee just focus right yeah yes you’re thinking too hard it must hurt right now I have to trust my brother and I don’t know if I could do that I’m worried that the whole thing could fall apart with over 40 Spanish restaurants in 2 square miles this is our new menu Chef Ramsay’s menu overhaul will now have the Spanish pilion standing out the croas is great excellent and then we’ll do um PA but will the brothers be able to pull it off here we go first order coming in one meatballs one Mano croquettes and the clams with Cho come on guys this first order we got to do it right go table two appetizers go I’m sending you what potatoes bers one dates table 11 okay looks wonderful brother let’s go this is gone let’s go after that it’s a rck lamb medium how is it fantastic yummy how is it it’s good yeah you likewise lightwise lightwise just to hear the chef say you guys can do it really got to my sons you two 30 seconds in the bath please together for them to realize if you work together and you concentrate you got a good business here you have an amazing opportunity now to really turn this restaurant around but it requires both of you Jerry I thought you were just some politician you are a genuine leader thank you Chef thank you great potential Michael a big heart but you’ve got to focus behind that line if you stay focused and master those dishes you’ll get there I promise you I will I promise you Chef Ramsey came here and I had the intentions that he was going to help put this place back on track I think he did more than what I expected I think he ignited my passion in the kitchen again put me closer with my brother this is what we needed and look after each other good [Music] night when I first arrived here I was greeted by a dead Lobster and a restaurant stuck in the 70s and in just a matter of days the Spanish Pavilion has been transformed but this restaurant will only succeed those two brothers find a way to stay United and work together Big Brother little brother in the weeks that followed okay take this to the table too give me those CL Jerry embraced his role as expeditor give me the free Harless and is now devoting more time to the restaurant and I need a fet medium well you have that working right Jerry medium well I was waiting on Michael is staying in the kitchen let’s go there you go there you go there you go and cooking full time and the new menu is being well received by the customers menu look awesome more importantly these brothers are united and carrying on the successful Legacy left to them by their grandfather tonight on Kitchen Nightmares Gordon Ramsey heads to West Babylon New York to help two former waitresses I can’t do this time cry about what we’ve become here who bought a restaurant called classic American hoping to achieve the classic American Dream fighting a losing battle every day but with almost a million dollars in debt feel like i’ failed what are we going to do these owners are in for the fight of their life stop going to my ear and let me work the kitchen has no stock we don’t have much stick Tera no Burgers the dining room has no supplies we have no cops no menus and everyone I got a comment about every is on edge back in one of the most emotional Kitchen Nightmares ever we lost our way Chef Ramsey pulls out all the stops not give up but he may be forced to do the unthinkable close your business close it close it West Babylon New York a close-knit suburban community located on Long Island an hour away from Manhattan best friends Colleen and Naomi started as waitresses at a small Quaint restaurant called classic American then in the year 2000 They seized an opportunity and bought the business from their boss what do you think we ready to open in a couple of minutes classic American was like my home I grew up here I figured I knew everything there was to know about the restaurant and why not everything’s good over going we knew the business we knew the customers and it was good this would be the beginning of something great soon after buying the restaurant Colleen made her son Kevin the head chef order and her boyfriend Dom The Unofficial manager give me uh two bags of raw shrimp thanks I started hooking up with Colleen and then she said well I could use you at the restaurant so she’s using me I enjoy my job of class American cuz it’s like a big family here big hugs Kev who it was good in the beginning for the first couple years the place was packed you didn’t have to worry or wonder if you were going to be busy now you’ll get maybe six or eight tables it’s scary you have to ask yourself what did I do wrong so tonight sucks every night sucks yeah we run out of things on the menu all the time we don’t have Clan ships tonight hey D why we run out of everything how up we haven’t been busy Dom’s job here at the restaurant is just to order the food which is never done it’s always kind of a problem Dom I need some of that chicken I hear you you don’t have to tell me eight times you need cucumbers on the line yeah no yes yes no which one is it hello nobody leads this restaurant you got a bunch of followers and no leaders the problem with Colleen and Naomi is they’re too easy going it’s more of a friendly relationship with the workers rather than business it’s ridiculous do you want to go out there or no I don’t know you know the waitresses they’re texting in between working somebody’s got to put these kids in order how many tables were there uh not that many nobody’s making money we’re not successful and you’re wondering how you going to keep doors open home sweet home I was forced to move back home my parents because I couldn’t afford I cry on the way to to work on the way home from work you cry about what we’ve become here and what are we going to do it gets to a point where you just dread being here it kills me it really kills me we can’t afford to close we needs someone to show us the way [Music] hey how are you sir Dom I’m the manager how you working as a chef before no actually I was a waitress waitress wow and what were you doing I was a waitress incredible and you bought it from the owner yes how much uh $240,000 really yeah4 a million dollar for this just the business not the property how much was that that was $440 wow so we’re in for 700 Grand so far um how long have you owned the restaurant for 10 years straight up what do you think worst thing is wrong with rest problem number one would be what what would you say I don’t think it’s just one thing I think it’s a lot of things give me one are you always normally this quiet no I’m not Chef Ramsey makes me nervous because I’m out of answers maybe my eyes are closed you know maybe the head’s so stuffed that it’s just not saying what it needs to see okay well listen um I’m going to have a good look at the menu taste the food and uh catch up later [Music] okay enter as strangers leave as friends enter as a stranger start dating the owner oh how are you today how are you I’m Ashley Ashley I’ll be your server I am freaking out having Jeff Ramsey come is very nering I can throw up right now so how long have you been here uh 10 years 10 years my God everyone’s been here for a substantial length of time mhm why have you been so loyal it’s like a little family great wow huge menu about 100 options there yes help me out um you could do fried calamari it’s very good is it mhm it’s one of my favorites let’s go for the fried calamari overseas salad okay and then I’d be stupid not to have the bomb the bomb Burger the bomb Burger does it look like that uh yeah you know what a big level of mac and cheese do you have any mac and cheese yes yeah lovely that’ll be all you got it thank you thank order you want to throw in a macaroni and cheese 150 order up Ash that’s my Mac and Cheese than that’s very fast in mac and cheese my God probably [Music] pre-made it’s MTH of Goo that’s gross uh-oh that doesn’t even taste like it’s been cooked here we don’t make the mac and cheese here no it tastes like that is that a big hit no it’s what the kids eat it ready uh yeah that’s Dreadful poor kids damn you think a menu with classic American you’d at least make your mac and cheese right yeah not good like really sorry I don’t really know what to say because I’m not the one making the food I’m just serving it what’ he say said it was gross I just hope he doesn’t run to they were gross soft and chewy what’s soft and chewy thear it’s not crispy I wasn’t a great feeling when he sending back all the food you know uh it’s what we do every day we think we do a pretty good job who wants the bomb next but uh everyone loves the bomb that’s one of our house Specialties he’s definitely going to enjoy that one all right the bomb Burger wow nice toasty bun where’s the burger ah there she is there is the Burger you probably won’t like that either how is everything bad does anyone season food in there season it yeah salt pepper uh we don’t add anything to it when wow the meat’s really chewy chewy as hell will we ask the chef to taste that okay Dam thank you you’re welcome um he said the burger is really chewy he said try it Dr it’s chewy uhhuh that’s weird it says on the menu the way mom used to make that has to be the biggest insult to every mother in America it’s embarrassing because those are our most popular dishes I was really sh this is the kitchen here right can I meet the chefs introduce me to the uh Team this is Kevin my son how you doing how are you nice to meet you likewise so you’re the headchef yes and this is your son son right on a scale of 1 to 10 rate the food in the restaurant between six and seven six and seven I would have said six half it and take two away and you you’re on my mark personally I like the food but what the do I know I was a brick layer you know what I’m saying let me tell you straight and honest okay the menu is hideous in a dining room that’s miserable the food’s depressing and you’ve got the audacity to call it classic American you can’t even get a burger right we eat the burgers here most nights were’re proud of that’s F seriously yes yeah I’m really sorry about your food I’m a little pissed off right now I couldn’t believe that he sent that you’re a young Chef standing by your mother totally respect that but you’re pulling it down and to think that you’re rating was 7 out of 10 mate you’ve got issues and as owners with a huge responsibility on your shoulders it’s like you guys have disappeared you’re screwed it’s not that I don’t try and I have not given up i’ tried to do the best it’s not that I don’t care and it’s not that I’m we’re trying to take St Cuts but we’ve cut back on the P roll and she’s got a baby and she can’t be here he’s got a baby and I can’t afford to pay him and I need to pay my people he’s not a comfortable position to be in I can see that but doesn’t stop you from trying so who’s on the payroll here we don’t we’re not on the payroll so not even the owners are getting paid we haven’t got paid in over a year I moved back home I live with my parents I knew you had your problems but I didn’t think it was going to be that bad the situation is actually worse than I thought it would be I want to go for a walk I got to do some thinking and um I’ll see you tonight God it’s depressing his first impression was that we didn’t care it made me realize we lost our way really sure you’re not really sure I I’m good with the customers right and yet you work behind the scenes you don’t front the C well and what are you doing are you running around uh I’m the bus boy tickets come on where’ your tab go originally coming out here this broke so now they handri the tickets ready we used to have a computer but um somebody spilled coffee all over the register and burnt it out we can’t afford to fix it Ashley what does this say oh ribbon cut me two pachis Ashley write the tickets better so do the tickets take a lot longer to hand right or well if the writing is sloppy it tends to get a little confusing how long’s the printer been down six months maybe order up even with handwritten tickets order up order up order up Naomi and Kevin managed to push out the food at a rapid Pace thank you you’re welcome got the food out fast isn’t it pretty fast excuse me this is HT unfortunately the fast food is not exactly pleasing to many of the customers just kind of soggy what’s wrong with it they said the shrimp is no good what is that callif white w wow no good the food coming back used to upset me more but it’s happened so often that I just become n to it does anyone ever get bothered about all the food coming back yes huh yes no it just seems everyone’s taking it lost for words I don’t know what to do you aren’t I’m taking it all in lightwise I know the feeding Colleen aist listen I know you’re stressed and you got a lot on your mind but take the rains and run your restaurant what can I get for you I’m cheese can I have spicy tender appetizer and burger there is no more Teresa no Burgers we’re out yeah you’re going to have to 86 I can we 86 a burger sorry with owner Colleen completely shutting down I really need that chicken for table 10 you’re going to have to wait a leaderless classic American runs into problem Table Three wants meatloaf we don’t have after problem we have no cops I need these clean immediately after problem is he leaving the customers unhappy it just doesn’t make any sense to me and the staff frustrated table 56 have been waiting 18 minutes for something to drink cuz I have no CS I know colen’s really stressed out how could you run a business when you don’t have enough silver you don’t have enough coughs can I have a cup um there are there’s none in there there’s none in there you know who would want to come to a restaurant like that that’s the organized I wouldn’t D I need soup cups can you please wash them out there’s nothing there are there’s two in there right now oh my God no soup cups like how do they expect me to serve seriously hey guys guys guys wash dishes wash dishes I can’t I got to I can’t do this tonight I really can’t I can’t you got to go work to line because I’m losing my mind it’s 2 hours into dinner service the kitchen has run out of everything from Burgers Teresa no burgers for out yeah to coffee is this FP even good no don’t do that and owner Colleen has just run out of patience I can’t I got to I can’t do this tonight I really can’t what’s the matter I’ve been fighting a losing battle every day you’re standing there and you’re not not getting anywhere and I just keep going and going and going you understand I do understand and I can see how painful it is I feel disappointed in myself feel like I’ve failed and I’ve tried hard you know at the end of the day it’s your family and it’s your friends and it’s not malicious and nobody’s out to hurt but I’m frustrated and I’m angry and I’m scared I’m really really scared I feel I had more lose than anybody else in this place excuse me here’s the the honest truth the the standards have been accepted too low and in amongst those standards there’s a big friendship friendship’s got all to do with it cuz there’s no friends when that place is closed they get their next job 6 months 3 months 2 weeks they move on and you’ll spend the rest of your life reducing that debt you’re right you’re absolutely right I need this to stay no but it’s not going to get better if you keep on doing the same thing right and I know that you cannot give up okay no let’s go and finish the service yeah I’ve never met a woman with as much on their shoulders as colen and today’s been a bad day but tomorrow I’m going to have to pick her up and get those standards up there and she’s got to set an example in his first 24 hours Chef Ramsey realized that there are many problems at classic American and high on his priority list is fixing the lack of communication here’s an exercise this morning that I need everybody to be open too I want to find out the problems you have with each other I want each of you to write down to questions to issues ask anything you want open house this is not going to go well people don’t like to be confronted here thank you okay so on the questions Colleen why do you always seem frustrated at the waitresses here we go because when these customers walk through that door you’re the first person that they see then they’re not getting the service if they’re sitting there and you’re texting on your phone they’re paying customers they deserve your attention not the person on the phone Ashley Tes you don’t text in the middle of service when customers are waiting for stuff to do you text when customers are wow Naomi why are you such a pushover because they’re my family they’re not though the family’s at home and this is your business and the difference is night and day you have to change I have to work on that okay um Dom why are we always running out of product I don’t close every night at the end of the day everything’s got to be stocked and written down what we need but I’m right you’re not right before you make an order okay you need to go through everything who’s not feeding you the right information he doesn’t wait for information he just goes I just got true telling you I don’t close every night you’re always so defensive I’m not we’re not picking on you you always got an answer you always got to come back that’s right I got a comment about every thing cuz when I open my mouth everybody shrugs their shoulders and gets a at it because you do it all the time that’s why that’s why cuz I see something wrong CU I see something wrong and I say something and she don’t want to be bothered she spent and you rather walk around piss off this is the problem is it you is it him is it me is it her who who it’s everybody no yeah it is everybody it don’t take one person to run a business you need a team you need a team but you need a chief exactly and ain’t no Chief here here your menus will be right out 50 seats and 30 menu trust us to run out on number 13 right I just wanted to hide there was people standing at the door and I was under so much pressure we didn’t have enough money to print any more menus so we had what we had 13 menus you’re kidding me told you it was hell here yeah you’re right it’s not far from Hell u m set there customiz down okay I’d much rather sit down with no menu and stand in the corridor staring at you as soon as I finished those menus pass on the next T thank you here you go after a slow start caused by the menu shortage you want to just get sliders and then we’ll just the special the trio the trio as your meal orders are finally taken I’m going to need two more sliders many of which include Chef Ramsey sliders is that good which gets the evening off on a positive note is good bur good they said it was excellent I need sliders mac and cheese and crab cake app okay uh Kleen yes well you open up now start getting the team together yeah I’m trying I’m trying an hour into dinner service the kitchen led by Colleen and her son Kevin are having a hard time keeping up with the orders table a needs their food they’ve been waiting so long she knows everyone’s waiting a long time okay and the mood in the dining room is starting to turn I don’t even remember what I ordered if they don’t make it now then we’ll leave food will be out shortly everything just sbled I was doing the best that I could do Table Three has been waiting a really long time right here they’re not waiting any longer than these people but these tables came in at 6:00 back walk please you don’t understand I understand stop going in my ear and let me work r r right as Colleen begins to get a grip of the kitchen once again that’s for table one food slowly makes its way out to the dining room take these but the customers are far from impressed oh my God how gross is that just send it back it’s terrible send it back they didn’t like the colar excuse me can I get this with like a little less sauce really spicy super spicy it was crazy he would like less sauce definitely just want to bury a head in the sand how much sauce you know we put on that Kevin about that much sauce usually take a bite of that tell me that’s normal yeah it’s [Music] normal Kevin if that’s normal you’re abnormal two Seas of salads going to table 12 the mother and Sun team are finally pushing food out where’s that going hold on hold on stop stop stop stop set it but a disturbing dish catches Chef Ramsay’s watchful eye look at that just touch it a plate of vegetable fingers going right through it this is the sorry state that we’ve got ourselves into if we are going to continue serving that close your business stop I wouldn’t Ser that to my dog tonight’s dinner service has been plagued with problems stop going in my ear and let me work send it back it’s terrible they didn’t like the call Mar but this last broccoli dish look at that was the last straw I get away just over here I’m sorry we’re not serving anymore tonight was terrible tonight was a nightmare I don’t want to face Chef Ramsey I don’t want to face my employees I just wanted everybody to go away because it was horrendous okay tonight was ridiculous instead of making progress we went back WS more than I ever thought was possible tonight I realized there’s no way this restaurant can survive unless there’s a dramatic change tomorrow from the minute you arrive it’s going to be change after change after change get ready for that agreed agreed yes good night we just lost our way I’m hoping Chef Ramsey can put us back on track Chef Ramsey knows that this dysfunctional restaurant needs a massive overhaul in order for it to have any chance of surviving so he goes to work immediately handwriting tickets you’re going to need to work with something that is from the 21st century and in here this is the state-of-the-arts POS system installed by Halo absolutely amazing stock control price check D those arguments are out I’m going for bread I’m going for potatoes and eat chicken eat ground beef it’s all in there good Gordon got us this awesome computer does everything but wipe problem menu is cool it’s exciting there’s a lot of new stuff they looked awesome and they tasted even better you eat this got to try the corn do I love the new menu it was easy it was fresh it was a lot of new things I’m excited I just bit my tongue oh man I just want to say something and I’m going to cry but can’t help the last couple days have been really rough but we pulled through it and I know you have to lead by example and somewhere along the line we got lost and I just want to apologize for that and say you know I’ve gotten lot of clarity over the last couple days and in order for anything to work you have to have a leader and you have to have strong leader because if if you don’t have leadership you you can’t function we’re family but we have a business to run okay so those didn’t okay well let me tell you something let me tell you something really important diners are standing in the dining room waiting to be sat down okay and look at the time we opened up 5 minutes ago come on guys they didn’t ask anybody if they could take a smoke break they know that service is about to begin again they should have been ready with the restaurant quickly filling up the server will be over shortly The Waitresses rush to redeem themselves do we see any d c as we want can to get you something to drink to start and Chef Ramsey looks to the owners to finally provide the much needed leadership at classic American noomi yeah I need a leader M cooking and talking at the same time is the hardest thing in the world to do when you get it right it’s Harmony yeah I want to hear it tonight okay Colleen and I had always just Blended in but it’s time to stand out now and it’s on our shoulders to make this work ruby you’re up I need a mac and cheese bite and a corn dog Kevin you got a classic burger okay two orders of wings all day got the wings yeah excellent nice keep it going guys yes yeah yes Naomi’s Newfound confidence has the kitchen humming get it going order up Ashley adding a shrimp appetizer oh the ladies my table but their food is already in so you have to let the kitchen know that okay feels really good to see colen to actually step up and tell us what to do and be the leaders take the meatloaf out pull pork right away let’s gok you’re welcome surprisingly we got off a good start I mean a really good start but based on the performance of this kitchen of the last 10 years I’m not holding out not yet all right Kevin turkey burger with onion rings just put it [Music] up guys guys look I’m not going to Ser that underneath there you bust your ass like that to create fantastic food you not to serve it on plates with crap underneath look all over the place come on I cannot afford for you to Take Your Eye Off the Ball now please yeah see that I was nervous and I was trying to get in the zone this where all the mistakes start to happen you’ve got to keep on driving yeah come on keep it going all together and we’ll all step up and we’ll get past it just watch the bottom of the plat to me there’s nowhere else to move but forward there you go excellent table N9 after looking after a small hiccup this kitchen led by Naomi is back in its Groove how is everything good you like it good choice and delivering high quality dishes that are striking a cord with customers how do we like everything absolutely delicious glad I will come back for more all right trust me okay as dinner winds down and happy customers leave the restaurant thank you bye it is clear that these two owners under the guidance of Chef ramsy Stay Together guys stay together have just made the greatest comeback in Kitchen Nightmares history how we doing guys doing good doing good where the tickets yeah we cleared the boards Keen place is full the board’s clear customers because it just puts that discipline across the line and more importantly you’re good at it Colleen know me this rest has every potential to really seriously become a huge success do not start
