Generally when I think of steak the first thoughts are more traditional flavor pairings of a steakhouse. Creamed spinach and roasted potatoes. Maybe even asparagus that’s 8 months out of season.

Instead we decided to go in a little bit of a different direction by pairing a domestic Wagyu Zabuton with flavors of cocoa, vanilla and brown butter.

The beef is partly cured and treated like a corned beef, hence the really raw appearance and coated in a coffee spice rub before roasted.
The parsnip is treated in a few ways. Roasted in beef fat, poached in cream and blended with vanilla and their skins are peeled and fried to resemble a bark.

Simple, yet absolutely delicious.
