Things I learned in culinary school:
Beef Bourguignon🍷RECIPE
Ingredients:
3 pounds chuck, cubed
4 oz bacon, diced (or pancetta)
Mirepoix- 1 onion, 1 large carrot, 2 sticks celery, diced
4 cloves garlic, chopped
1 tbsp tomato paste
2.5 cups red wine
1-2 cups beef or chicken stock
Bouquet garni- bay leaf, parsley, thyme
(2-3 sprigs each)
1 pound peeled pearl onions
Kosher salt & black pepper for seasoning
Chives or parsley for garnish
Instructions:
-in a dutch oven, render bacon & set to the side
-season beef, sear well & set to the side
-in same pot sauté the mirepoix, adding in the garlic & tomato paste
-add wine & stock, let reduce then add back in the beef, bacon, & herbs
-cover & cook in an oven safe pot low and slow at 300* for a total of 3 hours
-add pearl onions for the last hour of cooking (optional)
-season to taste & serve with minced parsley or chives
