I agree about the microwave. I do this for my chocolate and coconut meringue pies. Also, I have done it for the pudding for my banana puddings. Sounds so good I may get up and make a pie. 🙂
I am a fairly decent baker, but I always feel a little intimidated by meringue. I loved the fact that you dealt with whipping up the egg whites first. I didn't realize they would be ok sitting a little while. That is a game changer for me. Using the microwave for the filling is, too. I am going to try this recipe for sure.
I usually add a tiny pinch of salt and a half teaspoon of vanilla.

How long will the meringue stay stiff on the counter? Is it best to put it in the fridge? I am asking because I take care of my Mom and sometimes, I have to step away for a bit…❤

Almost identical to my mom’s recipe that she has been making for over 70 years and her mom’s recipe before that. Not sure if my great grandmother made it or not. I don’t use quite as much flour and add in 1/3 cup of semisweet chocolate chips. The chocolate chips are my twist on it.
