White Spoon Chef’s Gochujang Basil Chicken | Why I Finally Came Back

I’m finally back at Omma’s Table, finding my rhythm again with a dish I’ve really wanted to share with you all. Simply inspired by the winner of Culinary Class Wars, Chef Choi Kang-rok, and his ‘Food Otaku’ philosophy, I followed his recipe for this Gochujang Basil Chicken.

This is actually one of the Chef’s most famous recipes, which famously wowed the judges at MasterChef Korea years ago. It’s a masterclass in how a few specific ingredients, handled with a bit of obsession, can create something quite extraordinary.

Ingredients:

– 12-16 Chicken Wingettes (I used 12)
– The Sauce: 150ml (2/3 cup) Mirin, 50ml (~3.5 Tbsp) Sesame Oil (Or a 1:1 mix of Sesame and Perilla oil for deeper flavor), 2 Tbsp Soy Sauce, 1 Tbsp Gochujang, 1.5 – 2 Tbsp Stevia or Sugar (Adjust to your liking), 1 Tbsp Chili Oil
-The Aromatics: 10 Chinese Dates (Jujube), 20-30g Ginger, 2-3 White parts of large Green Onions (Dae-pa or any large green onion)

The Finish: A large handful of fresh Basil leaves

  1. Glad you're back, I enjoy your videos 😀I can't eat grains (food sensitivity), so do you have any suggestions for a mirin substitute? I can replace the soy sauce with tamari.
