This cheesy taco casserole is bold, comforting, and always disappears fast. Perfect for potlucks, family dinners, or when you need a guaranteed crowd-pleaser!

🛒 Ingredients
• 1 lb ground beef
• 1 packet taco seasoning
• 1 cup corn (canned or frozen)
• 1 cup black beans (optional, drained & rinsed)
• 1 cup salsa or diced tomatoes with green chilies
• 2 cups shredded cheddar or Mexican-blend cheese
• 2 cups crushed tortilla chips (or Doritos)
• ½ cup sour cream
• ½ cup shredded lettuce
• ½ cup diced tomatoes
• 1–2 jalapeños, sliced (optional)
• Green onions, for garnish
👩🍳 Instructions
1️⃣ Cook the beef
Preheat oven to 350°F (175°C).
In a skillet over medium heat, cook ground beef until browned.
Drain excess fat.
2️⃣ Season & mix
Add taco seasoning, corn, beans, and salsa to the beef.
Simmer for 3–5 minutes.
3️⃣ Layer the casserole
Spread half of the crushed tortilla chips in a greased baking dish.
Top with the beef mixture.
Sprinkle half the cheese over the top.
Repeat layers if desired.
4️⃣ Bake
Bake uncovered for 25–30 minutes, until hot and bubbly.
5️⃣ Add toppings
Remove from oven and top with sour cream, lettuce, tomatoes, jalapeños, and green onions.
6️⃣ Serve
Let cool slightly, then scoop and enjoy!
