2 Boneless Skinless Chicken breasts (Cut in 1/2 horizontally)
Lemon Pepper as needed to season all sides
Salt as needed to season all sides
Onion Powder as needed to season all sides
2 Tbsp bacon grease or your favorite oil
2 Tbsp Butter
8 oz. Baby bella Sliced Mushrooms or white
4 Slices thick cut Bacon (1 inch pieces)
2 C. Freshly grated Monterrey Jack Cheese (or other)
Chopped Parsley (optional)

Honey Mustard –
1/4 C. Mayonnaise
1/4 C. Honey
1/4 C. Dijon Mustard

375° Oven 15 – 20 minutes (Chicken internal temp. 165°)
