  1. For those wanting a lighter weight cast iron skillet—Field makes one that is about half the weight of typical cast iron skillets. I love mine! Much easier on my arthritic wrists and hands. That said, Lodge also has the skillets with finger grip handles on both sides instead of the long handle. I think these are easier, plus there’s less handle to get in the way on the stove.

  2. I use a roasting pan with lid for my chicken. My method is like yours with veggies on bottom with the chicken on top. The juices that flow down to the vegetable makes it so flavorful. And I don’t string together the legs either. What a waste of time.

  3. I have several cast iron skillets, dutch ovens and loaf pans, I use cast iron for almost anything.
    Cowboy Kent has a peach cobbler cooked in a dutch oven cooked over coals and coals on top of the lid, bakes perfectly, the family still talks about it and wants me to make it again.
    Cast iron is the way to go!

  6. May I please get some recipes that don't include onions, peppers and garlic… Yes, I know that's a lot of the flavor, so I use small amounts of ground spices. I have a very picky eater! Thank you !!! I know that's a very big challenge… welcome to my world…lol !!!

  8. I've made every recipe and trick she's given me in my cast iron skillets. It does everything.
    People really tend to overthink the cast iron thing. There's really nothing to it. The more you cook in it, the better it works. Only thing extra to do is heat it a few minutes on the stove after you clean it and apply a thin layer of oil to it, let it cool, and put it away.

  12. My children are adults. They are addicted to cast iron just like me. When the power was out over the years, we cooked in our fire place with all the cast iron and made our morning coffee. My 12" skillet and my dutch oven are used all the time. Mississippi Pot Roast is divine in the Dutch Oven. Also Corned Beef. I fry chicken in my 12" and chicken pot pie in my 10"

  13. I use cast iron nearly everyday. Great for health(get a daily dose of iron) . Most of mine are 100 years or older. My Wok is the youngest at 40 years old. When my granddaughter was 3; her doctor said she had low iron. The easiest fix is a cast iron fish! You can buy them pretty much anywhere; put them in any water based recipe…. i.e…pasta water, boiled potatoes, boiled rice; anything you need to boil in water or stock add the fish during the boiling.(one will last 3 years before losing Potency) Within 90 days; her iron levels were well Within normal. Now, my daughter uses cast iron cookware!

  14. I love and save all your videos! I do wish you would stop using Campbell's anything. They contain MSG and that gives me migraines, so I do end up tweaking but an alternative to Cream of Mushroom with no MSG that is premade is what I am looking for! Thanks for all the ideas!

  15. My favorite cast iron recipe – yellow crookneck squash, onion, oil – slice squash and chop onion, put in skillet with a tiny bit of oil. Heat over medium heat for a long time. You want all the liquid to cook out of the squash and onion, keep cooking until the squash and onion browns. We call it Squishy Squash.
