3 cups Water
3 tbsp Peanuts
1/4 tsp Fenugreek
1 tsp Oil
1/3 cup Wheat flour
2.5 tbsp Besan
1/4 tsp Ajwain

1 tsp Roasted Coriander powder
1 tsp Chili Powder
1 tbsp Sesame
1 tbsp Ginger gratings
2 Green Chili chopping
1 tsp Roasted Cumin powder
1 tsp Roasted Coriander powder
Salt
1 tbsp Chili Powder
2 tbsp Jaggery
4 tbsp Tamarind Water(extracted from leon size Tamarind)
4-5 tbsp Oil
2 Dry Chilies
1 tsp Mustard
1 tsp Cumin
1 sprig Curry leaves
1/4 tsp Hing
1/3 cup Tomato chopping
Coriander chopping

  7. "Recipe: Dhaba Style Dal Dhokli"
    Ingredients:-
    For the Dal (Lentils):
    * Toor Dal: 1 cup (pigeon peas)
    * Turmeric Powder: 1/2 tsp
    * Peanuts: 3 tbsp (adds a lovely crunch)
    * Fenugreek Seeds (Methi): 1/4 tsp
    * Oil: 1 tsp
    For the Dhokli (Dough):
    * Wheat Flour: 1/3 cup
    * Gram Flour (Besan): 2 1/2 tbsp
    * Carom Seeds (Ajwain): 1/4 tsp
    * Cumin Powder: 1 tsp
    * Red Chili Powder: 1 tsp
    * Turmeric Powder: 1/4 tsp
    * Coriander Powder: 1 tsp
    * Sesame Seeds: 1 tbsp
    * Oil: 2 tbsp
    * Salt: To taste
    For the Masala Mix:
    * Ginger: 1 tbsp (finely chopped)
    * Green Chilies: 2 (slit or chopped)
    * Coriander Powder: 1 tsp
    * Red Chili Powder: 1 tbsp
    * Jaggery: 2 tbsp (for that authentic sweet-tangy balance)
    * Tamarind Extract: 3-4 tsp
    For the Tempering (Tadka):
    * Oil: 3-4 tbsp
    * Mustard Seeds: 1 tsp
    * Cumin Seeds: 1 tsp
    * Dried Red Chilies: 2
    * Hing (Asafoetida): 1/4 tsp
    * Curry Leaves: A sprig
    * Tomatoes: 1/3 cup (finely chopped)
    * Fresh Coriander: For garnish

    Preparation Method:-
    * Cooking the Dal:
    In a pressure cooker, add washed and soaked toor dal. Add turmeric, peanuts, fenugreek seeds, oil, and 3 cups of water. Pressure cook for about 4 whistles until soft. Once cooked, mash the dal thoroughly.
    * Preparing the Dhokli:
    In a mixing bowl, combine wheat flour, gram flour, and all the spices mentioned under the "Dhokli" section. Add water gradually and knead into a smooth, firm dough (similar to chapati dough). Roll the dough out into a thin sheet and cut it into small diamond or square shapes. Set these aside.
    * Simmering Dal & Dhokli:
    Add 2 cups of water to the mashed dal and bring it to a boil. Once it starts bubbling, stir in the ginger, green chilies, coriander powder, chili powder, jaggery, tamarind extract, and salt. When the dal is boiling vigorously, drop the dhokli pieces one by one (to prevent sticking). Let them cook in the dal for 8 to 10 minutes.
    * The Final Tadka:
    Heat oil in a small pan. Add mustard seeds, cumin, dried red chilies, hing, and curry leaves. Add the chopped tomatoes and sauté until they turn soft. Pour this aromatic tempering into the boiling dal dhokli. Let it simmer for another 2 minutes, then turn off the heat.
    Serving Tip: Garnish with fresh coriander and a dollop of ghee for that extra richness. Serve hot!
