Baldío | The First Restaurant in Mexico City to Win a Michelin Green Star
The first restaurant in Mexico City to win a MICHELIN Green Star: Baldío
This is Mexico City’s first true zero-waste restaurant.
Inspired by a similarly themed restaurant in London, Silo. They work with local farmers and is part of the Arca Tierra project.
They offer “Chef’s Table” prepared with ingredients harvested directly from the chinampa. They are able to make your dining experience vegan if you ask! This experience served 8 dishes.
Reservations are highly recommended. This is a must for unique dining experience in Mexico City.
